Caramel Apple Snack Cake

A light, fluffy cake chock full of apples and drizzled with caramel sauce.
Serves: 12 Bars
  • ½ cup butter, softened (1 stick)
  • ¾ cup brown sugar
  • ¼ cup egg substitute or 1 egg
  • ½ whole wheat pastry flour
  • ½ cup cup all-purpose flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 apple, peeled, cored, and diced (I used Honey Crisp)
  • 1 tbsp. caramel sauce (I used Trader Joe's)
  1. Preheat oven to 350 degrees
  2. Spray and 8 x 8 brownie pan with cooking spray
  3. In a large bowl add butter, sugar and egg; beat until creamy.
  4. In a medium bowl add whole wheat flour, all purpose flour, baking powder, and salt; mix until combined.
  5. Gradually stir in flour mixture into butter mixture, just until combined. Stir in apples.
  6. Spread batter evenly into prepared pan. Drizzle caramel sauce over the top of the batter. With a knife; swirl the caramel. Place in the oven and bake for 25 - 30 minutes, until center comes out clean with a toothpick.
