Classic Banana Bread

A light, fluffy, low calorie bread, chock full of banana flavor.
Serves: 1 loaf
  • 2 cups all-purpose flour
  • ¾ tsp. baking soda
  • ½ tsp. salt
  • ½ cup sugar
  • ¼ cup butter, softened (I used Brummel & Brown)
  • ½ cup egg substitute or 2 large eggs
  • 1½ cups mashed ripe banana (about 3 bananas)
  • ⅓ cup greek yogurt, plain or vanilla flavor
  • 1 tsp.vanilla extract (omit if using vanilla yogurt)
  • Cooking spray
  1. Preheat oven to 350 degrees
  2. Spray a 8½ x 4 bread pan with cooking spray, set a side.
  3. In a bowl add flour, baking soda and salt, mix together.
  4. In a large bowl beat together butter and sugar. Beat in egg substitute, banana, greek yogurt and vanilla extract until well incorporated. Stir in flour mixture just until combined. Do not over beat it.
  5. Pour batter into prepared bread pan and bake for 60 minutes or until a toothpick is inserted and comes out clean. Let cool in pan for 10 minutes and take the bread out and place on a cooling rack.
Note: If the bread starts to brown before it is done, add some aluminum foil around the edges.
