Sweet, plump, soft center cookie that is slightly crispy on the outside and made with white chocolate, cranberries, pumpkin and oatmeal. Each cookie is only 45 calories!

Ingredients
¾ cup whole wheat pastry flour
1 cup regular oats
½ tsp baking soda
¼ tsp salt
¼ cup Truvia Baking Blends or ½ cup sugar
¼ cup butter, softened ( I used Earth Balance)
1 tsp pure vanilla
½ tsp. cinnamon
¼ cup egg substitute or 1 large egg
½ cup pumpkin (not pie filling)
¼ cup white chocolate chips
¼ cup dried cranberries
Instructions
Preheat oven to 350 F.
Line two baking sheets with parchment paper; set a side.
In a small bowl, combine flour, oats, baking soda, and salt; set a side.
In a large bowl, add sugar and butter and beat at med speed until well blended. Add vanilla, cinnamon, egg and pumpkin; beat well. Gradually stir in the flour mixture until well combined.
Fold in white chocolate chips and cranberries.
Drop a tablespoon size of cookie batter 2" apart onto prepared baking sheets.
Bake cookies for 8 -10 minutes until lightly browned on the bottom. Let the cookies cool on pan for about 5 minutes.
