Cranberry White Chocolate Pumpkin Oatmeal Cookies

Sweet, plump, soft center cookie that is slightly crispy on the outside and made with white chocolate, cranberries, pumpkin and oatmeal. Each cookie is only 45 calories!
Serves: 35
Ingredients
  • ¾ cup whole wheat pastry flour
  • 1 cup regular oats
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup Truvia Baking Blends or ½ cup sugar
  • ¼ cup butter, softened ( I used Earth Balance)
  • 1 tsp pure vanilla
  • ½ tsp. cinnamon
  • ¼ cup egg substitute or 1 large egg
  • ½ cup pumpkin (not pie filling)
  • ¼ cup white chocolate chips
  • ¼ cup dried cranberries
Instructions
  1. Preheat oven to 350 F.
  2. Line two baking sheets with parchment paper; set a side.
  3. In a small bowl, combine flour, oats, baking soda, and salt; set a side.
  4. In a large bowl, add sugar and butter and beat at med speed until well blended. Add vanilla, cinnamon, egg and pumpkin; beat well. Gradually stir in the flour mixture until well combined.
  5. Fold in white chocolate chips and cranberries.
  6. Drop a tablespoon size of cookie batter 2" apart onto prepared baking sheets.
  7. Bake cookies for 8 -10 minutes until lightly browned on the bottom. Let the cookies cool on pan for about 5 minutes.
