Cranberry Orange Chocolate Pistachio Cookies

A chunky, sweet cookie that is crisp on the outside, soft in the center and full of chocolate chips, cranberries and pistachios.
Serves: 47 Cookies
Ingredients
  • 2¾ cups all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup unsalted butter (two sticks), at room temperature
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, unpacked
  • 2 large eggs
  • 1 tsp. vanilla extract
  • ¼ tsp. orange extract
  • 1 cup dried cranberries
  • 1 cup semi-sweet chocolate chips
  • 1 cup pistachios, chopped small
Instructions
  1. Preheat oven to 350 degrees.
  2. Line two baking sheets with parchment paper; set aside.
  3. In a medium bowl, add flour, baking soda, and salt; set aside.
  4. In a large bowl add butter and sugar and beat until light and fluffy, about two minutes. Add the eggs one at a time. Add the vanilla and orange extracts and mix until combined.
  5. Slowly add the flour mixture into the egg mixture and mix until just combined.
  6. Fold in dried cranberries, chocolate chips and pistachios. You need some strength for mixing.
  7. Scoop about a tablespoon of dough onto prepared baking sheet and bake for 9 - 11 minutes or until cookies are lightly golden brown on the bottom. Let the cookies cool for two minutes on the pan and place on a cookie rack to completely cool.
