Apples and Cinnamon Baked Oatmeal

A healthy, gluten free baked oatmeal that is chock full of apples, raisins and pecans and sweetened with maple syrup.
Serves: 6 servings
  • 2 cups rolled oats
  • ¼ cup raisins
  • 2 cup apples, diced small
  • ¼ tsp. baking soda
  • 2 tsp. cinnamon
  • 2 tbsp. pecans, chopped small or nut of choice
  • 1½ cups almond milk or milk of choice
  • 1 egg
  • ¼ cup apple butter or apple sauce
  • 1 tsp. vanilla extract
  • ¼ cup maple syrup
  • ¼ tsp. stevia
  • Optional: A drizzle of maple syrup
  1. Preheat oven to 350 degrees
  2. Spray an 8 x 8 baking dish with cooking spray; set aside.
  3. In a bowl add oats, raisins, apples, baking soda, cinnamon and pecans. Mix together.
  4. In a separate bowl, add almond milk, egg, apple butter, vanilla extract, maple syrup and stevia. Whisk together until combined.
  5. Pour milk mixture over oat mixture and mix until combined. Pour into prepared baking dish.
  6. Bake for 30 minutes until lightly brown on top and oatmeal is set. You can drizzle some more maple syrup over the top. It makes it so moist the next day.
