Pumpkin Pie Breakfast Jar Parfait

A healthy, good for you breakfast parfait loaded with protein and fiber and made with pumpkin puree, yogurt and pumpkin oatmeal. The perfect on the go breakfast!!
Serves: Approx 1 ¼ cups
  • ½ cup greek yogurt, plain
  • ¼ cup pumpkin puree (not pie filling)
  • ½ tsp. vanilla extract
  • ½ tsp. pumpkin spice
  • ¼ tsp. stevia
  • ¼ cup pumpkin oatmeal
  • 1 tsp. pecans
  1. In a bowl, add yogurt, pumpkin puree, vanilla extract, pumpkin spice and stevia. Mix until combined. Taste to see if it is sweet enough for you.
  2. In a jar, add ½ the yogurt mixture, then top with pumpkin oatmeal and add remaining yogurt over oatmeal and sprinkle with pecans.
  3. For optional toppings you can add a drizzle of maple syrup, cranberries or apples.
