Caramelized Apples in the Crockpot

Healthy, low calorie slow cooked Fuji apples,marinating in a sweet sauce made with apple cider, brown sugar and spices.
Serves: 5 cups
Ingredients
  • 1½ lbs apples (5½ large apples), cored, sliced
  • 1 tbsp. lemon juice
  • 2 tsp. cinnamon, ground
  • ½ tsp. nutmeg
  • ¼ cup brown sugar or to taste
  • 1½ tsp. stevia (3 pkts.)
  • 1 cups apple cider
  • 2 tbsp. cornstarch
Instructions
  1. Spray the inside of the Crockpot with cooking Spray.
  2. In the bowl of the Crockpot, add apples, lemon juice, cinnamon, nutmeg and sugars. Mix until mixture is all over the apples.
  3. In a measuring cup add apple cider and cornstarch. Pour over the apples.
  4. Set the apples on low and cook for 3 - 4 hours until apples are tender. Half way between cooking time, stir the apples.
  5. Serve with ice cream or in yogurt, oatmeal or as a side dish with pork.
