Beef and Barley Soup

A traditional beef and barley soup chock full of fresh vegetables and slow cooked to perfection.
Serves: 8 cups
Ingredients
  • 1 lbs. black angus premium steak tips, cubed
  • 1 cup potatoes, peeled, diced small
  • 1 cup onion, roughly chopped
  • 1 cup carrots, diced about ¼" thick
  • 1 cup celery stalk, diced about ¼" thick
  • 1 15 oz can tomatoes, diced
  • 1 15 oz can tomato sauce
  • 4 cup beef broth
  • 1 tsp. worchestershire sauce
  • ½ tsp. thyme
  • ½ tsp. smoked paprika
  • ½ tsp. garlic powder
  • ½ tsp black pepper
  • 2 bay leaves
  • ½ cup beef barley, dried
Instructions
  1. In a crockpot add all of your ingredients, except for the Bay leaves. Mix until combined. Place bay leaves on top.
  2. Cook on high for 4 - 6 hours, until meat is cooked and vegetables are tender or on low for 8 - 10 hours.
  3. About 30 minutes before soup is done, add barley. Cook until barley is tender.
