Pumpkin Bread (Egg-less)

A moist, melt in your mouth pumpkin flavored bread that contains no eggs, just lots of flavor and only 66 calories a slice!!
Serves: 1 large loaf or 3 mini loafs (15 slices)
  • 1 Cup white whole wheat flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 Cup NuNaturals Presweet Tagatose or ¾ cup Sugar
  • 1 Cup pumpkin, canned not pumpkin pie filling
  • ½ Cup unsweetened apple sauce
  • ¼ Cup greek yogurt, plain
  • 1 tsp. vanilla extract
  • 1 tbsp. butter infused olive oil (or oil of your choice)
  • 1 tsp. cinnamon
  • ⅛ tsp. ground cloves
  • ¼ Tsp. pumpkin spice
  1. Preheat oven to 350 degrees
  2. Spray 1 loaf pan or three mini loaf pans with cooking spray; set aside
  3. In a large bowl add flour, baking soda, and salt; mix and set aside.
  4. In a bowl, add sugar, pumpkin, applesauce, yogurt, vanilla extract and butter infused olive oil. Whisk until combined. Add cinnamon, ground cloves and pumpkin spice; mix well.
  5. Slowly add flour mixture to the pumpkin mixture and fold together until combined. Do not over mix.
  6. Evenly divide batter into prepared mini loaf pans or pour into one large loaf pan.
  7. Bake mini loafs for 30 - 35 minutes, bake large loaf for 50 - 60 minutes. Insert a toothpick into center of bread, comes out clean, bread is done. Note: if the edges start to turn brown before bread is done, just lightly wrap a piece of aluminium foil around the edges.
  8. Let the bread cool for 5 minutes, then take loaves out and let them cool on a cooling rack.
