Soycutash Salad with Creamy Avocado Lime Dressing

A light, refreshing salad made with edamame, corn and sweet bell pepper tossed in a creamy avocado lime dressing.
Serves: 5
  • 2½ cups of Trader Joe's Soycutash (thawed) or a frozen bag of edamame, corn and red bell pepper
  • 1 large tomato, seeded, diced
  • **For dressing**
  • ¼ (35 grams) cup avocado
  • 1 tsp. lime juice
  • 2 tbsp. greek yogurt
  • ½ tsp. Chipotle in Adobo Sauce (more to taste)
  • ⅛ tsp. garlic powder
  • ¼ tsp salt
  • ¼ tsp. pepper
  • 1 tsp. milk to thin out
  1. In a bowl, add the Soycutash and tomatoes; set a side.
  2. To make dressing: In a blender, add avocado, lime juice, greek yogurt, chipotle in adobo sauce and garlic powder. Process until smooth. To thin out the dressing, add milk about a teaspoon at a time. Add salt and pepper to taste. Pour dressing over vegetables, and refrigerate until ready to serve.
