Banana Almond Breakfast Cookies

A thick, hearty, healthy breakfast cookie that tastes like Banana Oatmeal.
Serves: 20 Cookies
  • ½ cup applesauce, unsweetened
  • 1 (123 grams)banana, mashed
  • ¼ cup almond nut butter
  • 2 tbsp. maple syrup
  • 2 pkts. stevia
  • ¼ tsp. almond extract
  • ½ tsp. cinnamon
  • ½ cups oats
  • ½ cup oat flour (oats processed into flour)
  • ¼ cup wheat germ
  • ¼ cup flax seed, ground
  • ¼ cup almond meal flour
  • ¼ cup slivered almonds or diced almonds
  • ¼ cup dried mixed berries or dried cherries (whatever dried fruit you like)
  1. Preheat oven to 350 degrees
  2. Line a baking sheet with parchment paper; set a side
  3. In a large bowl stir together applesauce, banana, nut butter, maple syrup, stevia, almond extract and cinnamon.
  4. Stir in oats, oat flour, wheat germ, flax seed and almond meal until combined.
  5. Stir in almonds and dried fruit.
  6. With a large cookie scoop, scoop batter on to cookie sheet. You can place them close together since the cookies don't spread or rise.
  7. Bake for 10-15 minutes until lightly golden.
  8. Allow cookies to sit on cookie sheet for a few minutes until they are set enough to move to cooling racks.
