Strawberry Ice Cream in a Cinnamon & Sugar Cup

A healthy natural strawberry ice cream served in a cinnamon and sugar flour tortilla cup.
Serves: 1 Serving
  • 1 medium flour tortilla (8' Mission Carb Balance Tortilla - 120 calories)
  • ¼ tsp sugar
  • ¼ tsp cinnamon
  • 1 cup frozen strawberries
  • ¼ cup milk
  • a pinch of sugar (optional)
  1. Preheat broiler to high.
  2. Spray ramekin with cooking spray; set a side
  3. In a small bowl mix together cinnamon and sugar; set a side.
  4. Brush the flour tortilla with a little bit of water and sprinkle with cinnamon and sugar mixture. Gently fit the tortilla into the ramekin and place in broil for 3 - 6 minutes, until the top is lightly browned (be sure to watch it). Set aside to cool for about 3 - 5 minutes.
  5. Meanwhile in a blender or food processor, add strawberries and milk and process until ice cream consistency. You may need to add a pinch more milk to get the consistency that you want. Also, you can add sugar, chocolate, ect.. blend again until incorporated.
  6. Add your ice cream to your tortilla cup! Serve and enjoy!
