Jalapeno Cheddar & Bacon Cauliflower Soup

It is that time of year where we are getting so busy with the holidays, closing out end of the year at the day job and to top it off, it is cold outside!  I really hate the cold.  Can you believe I am from Buffalo, NY?  Now living in California I still complain about the cold.  I guess I should be grateful that it is in the 40’s & 50’s.  Anyway, to warm you inside and out I have for you today, a super quick weeknight meal that will take minutes to make and not make you feel guilty at all.  It is Jalapeno Cheddar & Bacon Cauliflower Soup.


This soup is so good!  It is rich, creamy, has a hint of heat from the jalapeno and you get little bits of bacon.  You have to love the bacon bits.  The soup has a light cheddar cheese flavor.  I debated about adding more cheese, but this soup has just the right amount without being too overbearing.  The cauliflower has such a nice subtle flavor, you don’t even realize you are having cauliflower.  This is such a great swap for potato soup.  Plus, this soup is very filling.

The making of this soup is so easy!  You won’t believe how simple it is.  It takes from start to finish about 12 minutes to make.  That’s it!  You will have hearty, warm, tasty soup in a matter of minutes.  Can you believe that?  How did I do it?  With new Veggie Swap-Ins from Green Giant®.  These products will swap in veggies, like Cauliflower Veggie Tots for potato tots, or Riced Cauliflower for regular rice.  For today’s recipe, I used Green Giant® Cheddar & Bacon Mashed Cauliflower in place of potatoes.

When I saw this product at my local grocery store I was so excited to try it.  I love cauliflower and I don’t cook it nearly enough.  My Husband oddly enough craves cauliflower with cheese.  I just knew that making this soup would be the perfect meal for me and my family.  I was right, the only problem is I didn’t make a double batch.  I bought a few packages of the Green Giant® Cheddar & Bacon Mashed Cauliflower for future use and I can tell you that I will be making this soup again soon.  Plus, making the Green Giant® Cheddar & Bacon Mashed Cauliflower in the microwave makes for a quick side dish too.  It is a perfect complement to any meal.

To make the soup, I cooked the Green Giant® Cheddar & Bacon Mashed Cauliflower in the microwave.  I just followed the directions on the package.  While that was cooking, I started the base of my soup.  In a large sauce pan I added butter, onions and jalapeno.  I cooked until it was transparent in color.  Then I added some chicken broth, brought it to a boil, then added my Green Giant® Cheddar & Bacon Mashed Cauliflower.  I let it come to a simmer and turned off the heat on the stove.  I let it sit for 5 minutes and I had this thick, delicious soup.  I didn’t feel the need to add any additional flavors since it is full of flavor.

For a little added color, I topped the soup with some chopped scallions and a couple of jalapenos for presentation.  Like I said before, I debated about adding additional cheese on the soup, but I truly feel that the flavor and creaminess of the soup was just perfect as it was.  If you are a cheese lover, add more cheese.

Ingredients
  • 20 oz pkg. Green Giant Cheddar & Bacon Mashed Cauliflower
  • 1 tbsp. butter, unsalted
  • ⅓ cup onion, chopped fine
  • 1 jalapeno pepper, seeded, chopped fine
  • 1 cup chicken broth, low sodium
  • 2 tbsp. scallions, chopped small
Instructions
  1. Take Green Giant Cheddar & Bacon Mashed Cauliflower and place 2 slits in the plastic, microwave for 7 minutes, carefully lift plastic, stir and cook for another 3 minutes. Let it sit for 1 minute.
  2. While cooking the Green Giant Cheddar & Bacon Mashed Cauliflower, in a large sauce pan, melt butter. Add onion and jalapeno pepper and cook until transparent; about 3 minutes. Add chicken broth and bring to a simmer. Stir in cooked Green Giant Cheddar & Bacon Mashed Cauliflower. Once it starts to boil, turn off heat and let it rest for 5 minutes.
  3. Pour into a bowl, add scallions if desire
Notes
I used a mini food chopper to chop onions and jalapeno. You can add additional cheese if desired. I just found the flavor perfect without the cheese.

Yum, I am just loving this soup.  It is perfect for a weeknight meal, a quick-lunch or even serving it as an appetizer at a family gathering.  The soup is quite elegant and no one would know it wasn’t made from scratch.
