Turkey Street Tacos #TurkeyTuesday

Hi Everyone,

Today I am going to toot my own horn; toot, toot!  I made, I kid you not, the best tacos ever!  I took the classic taco recipe and made a few changes that takes classic tacos up another level.  This my friend is restaurant quality tacos!  I am so overly impressed I can’t even believe it.  I normally will eat two tacos and today I ate 3 and really debated about 4!  I did use a little self-control, but not much.  I am just so excited to share this recipe for you.  Now you can make gourmet tacos at home that will impress the taco lovers in your life!  Today I have for you Turkey Street Tacos.

Sigh… Just looking at the pictures above.  The tacos are all gone, every last one got eaten.  That saddens me.  However, now I can make them at home all the time.  In less than 30 minutes you can have blow your mind tacos that not only tastes good, but are good for you too!  Talk about guilt-free.  The flavor of the tacos are just so darn delicious.  They have a kick of heat from chipotle but is cooled by Mexican Crema, which is a sour cream and lime mixture.  I topped the tacos with iceberg lettuce for crunch and after-all this is California, I had to include avocado.  Plus the star of the show, Foster Farms Organic Ground Turkey.  Wait till I show you how I made this yummy dinner.

The first thing I did was make my own taco seasoning.  I used chipotle chili powder, garlic powder, onion powder,  crushed red pepper flakes,  dried oregano, paprika,  ground cumin, sea salt, and black pepper.  It is so easy and has so much more flavor than store-bought seasoning, but feel free to use your favorite taco seasoning.

For the meat I used Foster Farms Organic Ground Turkey.  I love Foster Farms Organic Ground Turkey because it nutritious and lean source of protein with only 160 calorie per 4 oz.  Plus my favorite part is that it does not contain any antibiotics and the turkeys are raised free-range on organic land and is only fed an organic vegetarian diet.  Plus 100% natural with no hormones or steroids.  To boot, I love to support local businesses and Foster Farms is located in California’s Central Valley.  All the good things that is California.  Here is my cooked Foster Farms Organic Ground Turkey.  You can see the homemade seasoning in my turkey meat.

To give my Turkey Street Tacos the extra love, I took the basic condiments and jazzed them up.  The first thing I did was make the Chipotle Pico de Gallo.  This is a simple combination of tomatoes, red onion, red wine vinegar, chipotle in adobo sauce and cilantro.  This topping has just the right amount of heat that you do not need to add hot sauce to the tacos.  Plus I used tomatoes from my garden.  Can you believe they are still growing?  I’ll need to pull it out soon.

I also made a simple Mexican Crema, which is a light sour cream that is mixed with lime zest, lime juice and just a pinch of salt.  It is so good I could just eat it with a spoon.  I put it in a baggie so I can drizzle it over my tacos.  The Mexican Crema and Chipotle Pico de Gallo can be made in advance and will last up to 2 days.

To give it the Street Taco feel I also charred my flour tortillas.  I simply placed them on the burner of my stove and heated them over medium heat for about 15 seconds per side.  You could also grill them, but this is so much quicker.  Just please be careful if you do it over the stove top.  The tortillas burn quickly and could start a fire if you are not careful.

I also served my Turkey Street Tacos with a few toppings.  I added Iceberg Lettuce for crunch, Cotija Cheese which is robust Mexican Cheese that crumbles perfectly on tacos, plus an avocado.  I love sliced avocados on tacos, it gives it a nice rich, creamy taste.  I served freshly sliced jalapenos with it, but I actually didn’t feel the need to use them.  I know, crazy, me missing out on peppers.  But truly less is more with these tasty tacos.

This is such a great meal and is truly part of my California lifestyle.  It is filling, made with natural and authentic ingredients and makes me happy when I eat it.  I love that I used Foster Farms Organic Ground Turkey, because it is low-fat, low-calorie and is amazing made as taco meat.  When I think California food, I think Mexican, tacos and avocados.  To me that is California cuisine and so is today’s recipe.  My Husband who does not have the same taste in food as me, said he loved the tacos.  I asked the magic question, would you eat these again?  He said Yup!  Score!  I got another one that will be saved in the recipe box for the family to enjoy.

A quick, under 30 minutes gourmet taco dinner that is made with a slightly spicy ground turkey that is topped with a homemade Chipotle Pico de gallo and easy to make Mexican Crema, plus avocado, cotija cheese which is served on slightly charred tortilla shell.

Ingredients
  • Taco Seasoning:
  • 1 Tbsp. chili powder I Used Chipotle Chili Powder)
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • ¼ tsp. crushed red pepper flakes
  • ¼ tsp. dried oregano
  • ½ tsp. paprika
  • 1½ tsp. ground cumin
  • 1 tsp. sea salt
  • 1 tsp. black pepper

  • Tacos:
  • 16 oz Foster Farms Organic Ground Turkey
  • ¼ cup water
  • 8 soft shell flour tortillas (I used 6")

  • Chipotle Pico de Gallo:
  • 1 cup tomatoes, diced small, seeded
  • 4 tsp. red onion, minced
  • ½ tsp. red wine vinegar
  • ½ canned chipotle pepper, minced
  • Salt, to taste
  • 1 tbsp. cilantro, cut into thin strips

  • Mexican Crema:
  • ½ cup light sour cream
  • ½ tsp. finely grated lime zest
  • 2 tsp. lime juice
  • 1 dash of salt

  • Toppings:
  • 1 cup iceberg lettuce, shredded small
  • 1 avocado, sliced
  • ½ cup Cojita Cheese
  • 1 jalapeno, sliced (optional)
Instructions
  1. To Make Taco Seasoning - In a small bowl; add all of the herbs and spices; mix until combined (or you can use 2 tablespoons of taco seasoning); set aside.
  2. Taco Meat - In a large skillet, add Foster Farms Organic Ground Turkey. Over medium heat, cook turkey until no longer pink; stirring constantly. Add taco seasoning and ¼ cup water. Cook until water is evaporated; stirring constantly. Take turkey meat off the burner; set aside.
  3. Place flour tortillas over medium heat on top of burner of the stove. With tongs, flip the tortillas after about 15 seconds. You just want to get a light char on the tortilla shells. You can also place on grill to lightly char the tortillas. Just be careful and don't walk away from the tortillas, they burn fast.
  4. To make Chipotle Pico de Gallo - in a bowl, add tomatoes, red onion, red wine vinegar, and chipotle pepper; mix until well combined. Taste test and add a pinch of salt. Mix in cilantro; set aside.
  5. To make Mexican Crema - In a bowl, add sour cream, lime zest, lime juice and salt; mix until well combined; set aside.
  6. Put tacos together - Evenly divide turkey meat between tortillas; top with Chipotle Pico de Gallo, iceberg lettuce, avocado, cojita cheese and top with Mexican Crema.
Notes
You can skip making your own taco seasoning and just use store bought. You can also use corn tortillas if you like that better than flour. The Crema and Chipotle Pico de Gallo will last up to 2 days in the refrigerator. I made them in advance.

This was just a fun recipe for me.  I can’t get over how changing up a few simple ingredients really added so much more flavor to tacos.  This will truly be my new go to recipe.  Honestly, I wasn’t sure about ground turkey?  I have only used it a few times and never in tacos.  Tacos are one of my go-to easy recipes that I make all of the time and switching it to ground turkey, I wasn’t sure.  But today, I am a believer!  I will now always use ground turkey in place of beef.  I am so happy with the taste, flavor and texture of the turkey.  I am sold and so is my family.  I am a happy girl!

So why do I call these Street Turkey Tacos?  In California there are a ton of food trucks and when you order tacos they look like these (but shhhhh mine taste better).  They have simple ingredients, something you can eat with your hands and is loaded with flavor.  To me, today’s Turkey Tacos are Street Tacos to me, but only better.

Happy Wednesday. I am sharing with you my little o Happy Wednesday. I am sharing with you my little outdoor space with our lounge chairs. Truthfully I wanted to get rid of the lounge chairs as they take up so much room and we never lay on the chaises. However, over the winter my husband made new cushions for the them and I didn’t have the heart to get rid of them. He made the cushions for our dog Samantha who passed away this winter. She loved laying on the lounge chairs. The boys don’t like to sit on them, unless you are on them too.

I do like the color combination of this space. It’s relaxing and I just love the Gerbera flowers. I wish I could keep the pillows on them, but my little Sully 🐶loves to tear apart pillows. So the pillows are living in my living room. I’ll bring them back outside if we have guests.

I’d like to say with the warmer weather it’s time for Summer decor, but it has been unseasonably cool here. We are still in the 70’s and windy. Great for the plants, but not me. I need some 80’s. My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers! 

I hope you check out everyone’s outdoor space. I love this time of year and I can always use more outdoor inspiration.

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!
