Cinnamon & Pear Oatmeal Cookies

Hi Everyone,

I was in the mood to create a new cookie, that is pretty healthy, guilt-free and something I can have for an afternoon snack or a quick pre-breakfast snack to have as I drive to work.  I wasn’t sure what to make, but I saw a bowl of pears on my counter and I thought, I could incorporate a pear into a cookie.  I automatically thought I must add cinnamon, and oats and fa la Cinnamon & Pear Oatmeal Cookies.

These cookies are so good!  yeah, yeah, I know your thinking I am just saying that, but they are.  They taste like a pear pie.  They are slightly chewy, thick, pops of pear and a nice cinnamon flavor.  Oh and the smell of them baking is O.M.G.  I couldn’t wait for these little gems to be finished.  My kitchen smelled like Fall.  Nothing like the smell of cinnamon and oats baking in the oven.  Yum!

 


Cinnamon & Pear Oatmeal Cookies

The cookies are a breeze to make.  I used a large spoon and one bowl.  I like quick, easy clean-up.  For the cookies I used coconut oil, coconut sugar, vanilla and 1 egg; gave it a nice mix and then added baking soda, salt, cinnamon and whole wheat flour.  I gave that a mix, and shhhhhh a little taste.  Had to make sure it tasted sweet enough.  Then I added the oats and fresh pear that I peeled and sliced small.  How easy was that?  I just baked for 10 minutes and you have these beautiful little cookies that are chock full of wonderful flavor.

These cookies don’t spread much in the oven, which is good because I was going for a big, thick cookie.  You can easily make these cookies gluten-free, by using gluten-free rolled oats and gluten-free flour.  I actually used Trader Joe’s Rolled Oats in this recipe, which is gluten-free.  The cookies are dairy free since I used coconut oil in place of butter.  I love Trader Joe’s coconut oil.  It’s in expensive and great for baking.  I suppose if you do not have coconut oil, softened butter will work, but I haven’t tried that.  The flavor may change a little too.  Just know you don’t taste the coconut in this recipe, even with coconut oil and coconut sugar.

Thick, chewy, big oatmeal cookies with chunks of fresh pear and a hint of spicy cinnamon. Tastes like a mini pear pie. This is and easy one bowl cookie that are low calorie, dairy-free and full of Fall flavor. Great after school snack.

Ingredients
  • ½ cup coconut oil
  • ½ cup coconut sugar or brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 tsp. cinnamon, ground
  • ¾ cup whole wheat
  • 1½ cup old fashion oats (I used Trader Joe's rolled oats)
  • 1 cup pear, peeled, cored, diced small (1 large pear)
Instructions
  1. Preheat oven to 350 degrees.
  2. Line 2 baking sheets with parchment paper; set aside.
  3. In a large bowl; add coconut oil, coconut sugar, egg and vanilla extract. Mix with a spoon, until well combined.
  4. Add to the same bowl, baking soda salt, cinnamon and whole wheat flour; mix until well combined. Stir in pear and oatmeal.
  5. With a large cookie scoop (I used 3 tbsp. capacity scoop), scoop out the dough and pat it into the scoop to form a firm cookie. Place onto prepared baking sheet, spaced about 2" apart. I put 9 cookies per baking sheet. Note: I used my fingers to pat the top of the cookie to flatten a bit and to make sure it is held together.
  6. Bake in oven for 10 minutes, until bottom of cookie turns lightly brown. Let cool on cookie sheet for 5 minutes; place on cookie rack until completely cooled.
Notes
You can make the cookies gluten-free by using gluten-free oats and flour.

Cinnamon & Pear Oatmeal Cookies

When creating this recipe, I went with my personal guidelines for a guilt-free cookie; below 9 grams of sugar, and contains protein and fiber.  I also like that it doesn’t have butter and the only cholesterol is from the egg.

I hope you enjoy these cookies as much as we do.  They are so easy to make and so full of flavor.  I love the simplicity of the recipe and if you don’t have a pear, use an apple.  I bet with apple it would taste just amazing!

    These cookies are so good! I made them several times with pears from my pear tree. I reduce the sugar in half but kept to the recipe aside from that. Delicious!

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.
