Peanut Butter Oat Balls

Hi Everyone,

This past Sunday, I was craving something sweet like a cookie.  I told myself that I would eat healthier and I would try to stay away from baked goods.  I tend to over do when they are around.  Last weekend I made chocolate chip cookie bars, and I froze them for my Husbands lunch, and when I would come home from work, I would eat two.  After all who can eat one chocolate chip cookie bar?  Not me!   So I told myself, I need to make something healthy for me that will satisfy that craving.  That’s when I decided to make Peanut Butter Oat Balls.  I haven’t made balls in forever, and I am so glad I did.  Just one Peanut Butter Oat Ball satisfied my craving.  The perfect afternoon snack and pick-me up.

These balls are so yummy!  The peanut butter just melts in your mouth.  They taste like a peanut butter cookie, but healthy for you.  They are so easy to make, and most of the stuff is probably in your pantry.  I used Skippy Natural Peanut Butter, organic maple syrup, vanilla extract and Trader Joe’s Gluten-Free Rolled Oats.


To start the recipe, you need to make oat flour.  I just took two cups of rolled oats and processed them in my mini food processor until it was the consistency of almond meal.  Than I put all of the ingredients into a bowl, and mixed until well combined.  Give it a taste before you roll into balls.  You want to make sure it is sweet enough for you.  I added a tad more maple syrup to sweetened them up.  You could also use honey if you prefer.  I had to add chocolate, so I cut up some dark chocolate and added it to the mix.  I used Trader Joe’s Pound Plus Dark Chocolate.  I think it is the best chocolate, especially for the price.  You could add mini chocolate chips if you desire.

I froze my balls in the freezer.  I like to keep them stored there because they don’t freeze completely because of the fat from the peanut butter.  You can also refrigerate them if you would like.  Just don’t keep them on your kitchen counter.

When you bite into these gems, they just melt in your mouth.  You have a fabulous peanut butter flavor with just a hint of chocolate.  Oh they are so good.

A simple, no bake protein snack, made with peanut butter, oats, and sweetened with maple syrup and dark chocolate. They taste like a peanut butter cookie.

Ingredients
  • 1 cup natural peanut butter
  • 2 cups oat flour (I used Trader Joe's GF Rolled Oats)
  • 3 squares dark chocolate, chopped small
  • 1 tsp vanilla extract
  • ⅓ cup maple syrup.
Instructions
  1. Add all ingredients together in a medium bowl; mix until well combined. Scoop out about a tablespoon size of the batter and roll into a ball.
  2. Place onto a cookie sheet and place in the freezer for 30 minutes. Store the peanut butter oat balls in a freezer bag or container. They can be stored in an air tight container in the refrigerator.
Notes
To make oat flour; add 2 cups of oatmeal into a mini food processor and blend until the texture of almond meal.

These are not only fun to eat, but they are fun to make too.  I enjoy making these kind of snacks and I don’t feel bad eating it either.  These make for a great pre or post workout snack too!
