Homemade Dill Pickles

Hi Everyone,

This past weekend, I was yet again at the Farmers Market and I picked up a bunch of Kirby Cucumbers.  I always wanted to try pickling cucumbers and what better time then when the cucumbers are in season.  This recipe is super easy to make and you can canned them or refrigerate them, whatever your desire is.  I made 5 refrigerator and canned 3 jars of them.  Here is your weekend project; Homemade Dill Pickles.

Homemade Dill Pickles

You can use Kirby Cucumbers or Persian Cucumbers to make these delicious treats.  You could opt and use English Cucumbers, but they tend to get a little soft.  First thing to do is gather your ingredients.  I made myself a little working station.  If you plan on canning them, fill your canner with water and bring it to a simmer.  If you decide to can them, the pickles will be a little softer, since canning them tends to cook the cucumber. Oh and don’t forget to sterilize your jars.  I used 8 pint size mason jars.  You do that by either putting them in the dishwasher under sanitize mode or put them in boiling water.

Wash your cucumbers and trim the ends, aka blossoms.  The ends will cause enzymes and you don’t want that.  For filling the jars, I added in each jar; 1 clove garlic, 1/2 tsp. peppercorns, 1/2 tsp. chili flakes and a few sprigs of fresh dill.

You can slice the cucumbers or cut them into spears.  I did one jar spears and the rest sliced.  Pack the jars with the cucumbers, leaving an 1/2″ room on the top.  Don’t over stuff it.

Now that your jars are prepared it’s time to make the brine.  Just add equal amounts of water and vinegar with a little bit of kosher salt.  Bring to a boil and pour brine into prepared jars.

Add the lids onto the mason jars, but don’t screw the band super tight.  Let it sit out until it is room temperature.  Then add to the refrigerator.  They will last several weeks.  I heard people say they last up to a year.  I don’t think they will last that long if they were in my house.

If you are going to can them, put the lids on and again don’t screw the bands super tight.  Place in the simmering water, and bring to a boil.  Once it boils, set the timer for 5 minutes.  Then carefully take out of the water.  Leave on counter to come to room temperature.  Store in a cool dark place.  These will last over a year.

Ingredients
  • 3 lbs. (12 cucumbers) Kirby or Persian Cucumbers
  • 8 cloves garlic
  • 4 tsp. red pepper flakes
  • 4 tsp. peppercorns
  • 1 bunch dill weed
  • 6 cups distilled vinegar
  • 6 cups purified water
  • 9 tbsp. kosher salt
  • 8 pint size mason jars with lids
Instructions
  1. Sterilize your jars by putting them in boiling water or using the dishwasher on sanitize mode.
  2. Wash the lids and bands with warm soapy water.
  3. If canning; In your canner add water and bring to a simmer. Make sure you have enough water in the canner since you need to have the jars submerged at the water needs to be least 1” above the jars.
  4. Wash the cucumbers and cut off the ends. Slice cucumbers either into spears or ¼” slices.
  5. In each jar; add one clove of garlic, ½ teaspoon of pepper flakes, ½ teaspoon of peppercorns and a few sprigs of fresh dill into your jars. Add the cucumbers; leaving a ½” from the top.
  6. To make the brine; In a large pot over medium-high heat add vinegar, water and salt. Bring to a boil. Turn burner off and pour brine over cucumbers; leaving a ½” room on top. Make sure all the cucumbers are completely covered. Note: To make this step easy, I ladled the brine into my Pyrex measuring cup and poured over the cucumbers.
  7. Place the lids onto the jars. For refrigerated pickles, let them sit out until they are room temperature, then store in the refrigerator. Don't eat the pickles for at least 24 hours for best flavor.
  8. For canning; add the lids and bands to the jars. Don’t screw the bands super tight. Add the jars of pickles into simmering water of the canner. Bring to a boil. Once it boils; set the timer for 5 minutes. Carefully take the jars and let them come to room temperature. Be careful because they are hot. Store in a cool dark place for a year.
Notes
If you have a smaller batch of cucumbers, cut the recipe in half. As long as you have equal parts of water and vinegar, along with some salt; it will work out perfect.

Dill Pickles

This is such an easy recipe and if you refrigerate them it’s even quicker.  Prepping time was about 15 minutes.  I put the jars together while the vinegar and water mixture came to a boil. If canning them, they take a tad longer, but not much.  Now you can enjoy your pickles all summer long.  Place on burgers or hot dogs, add to salads or eat them on their own.

    Those bread and butter pickles are monstrous! I love it! They would easily cover the surface of a burger. I really want to try making my own at home, so thank you for this recipe! i’ll report back with how my pickles do!

      I have no patience. I ate mine right the next day. The longer they sit the more flavor they get.

      How long do they last in the fridge if you don’t open them. I see you said 4 weeks but I just opened a jar I made last July and they are yummy. Any problem eating them?

      If you are not canning them, keep them in the refrigerator. They should last about 4 weeks, maybe longer?

    I use pickling spice mix which has all spices already mixed in, how much should I put in the each jar? I was always told 1 TPS for each jar, is it?

    I love this recipe. I put more pepper flakes in and the pickles are deliciously spicy and hot. YUM! I also doubled the garlic as we like the pickled garlic as well.

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
