Now that it feels like summer, I thought it would be a great time to pull out the Popsicle mold. I love Popsicles! I thought it would be a bit healthier making my own, rather than buying them and besides I think there fun to make. Plus it’s so quick and easy. The hardest part is waiting for them to freeze. For today’s Popsicle I made Pineapple Banana Popsicles.
These Popsicle’s tastes so delicious! It’s rich and creamy and tastes like a pina colada without the rum. I made it with frozen pineapple, and a fresh banana and coconut milk. Of course to give it a tropical taste I also added a little bit of coconut extract. It truly tastes like a decant treat.
The banana gives it such a nice creamy texture and for some odd reason when you add coconut extract the banana flavor kind of goes away and your left with a true coconut flavor. The pineapple notes really shine though nicely. I would have liked to have made this with fresh pineapple, but I didn’t have any on hand. If you have fresh pineapple, use it in this recipe.
- 1 cup pineapple, frozen
- 1 medium (7" to 7-7/8" long) banana, fresh
- 1 cup coconut milk, unsweetened from carton
- 1 tsp. coconut extract
- in a blender add all the ingredients and process until combined. Pour into Popsicle molds. Place in the freezer until completely frozen, about 2 - 4 hours.
- Run warm water under on the Popsicle mold and carefully remove the Popsicle.
Do not use coconut milk from a can.
Each Popsicle are only 35 calories each. You can not beat that. A perfect treat for kids. For adults, add a pinch of rum and you have a perfect poolside Popsicle.
I bought my Popsicle mold at Cost Plus World Market. As I stated in the recipe, you can also use a plastic cup, and pour the mixture into the cup, top with aluminium foil or plastic wrap and poke a hole in the center and place the Popsicle stick in the hole. Just be careful that it doesn’t tip over in the freezer.
