Howdy Everyone,
You ever look in your refrigerator or your counters and you have no clue what to make, then you see fruit that is so soft that you can’t eat it and you know that if you don’t use it like right this minute it will not be good any longer? Well that is how I developed today’ recipe. I had two peaches that were not bruised, not wrinkly, but so soft they they almost burst in my hand. I thought, I guess the only thing I can do with it is blend it up and make a smoothie. Let me introduce to you today’s recipe; Peach Mango Smoothie.
I have to admit this is one of the best smoothies that I have made in a long time. The flavor of the peaches is outrageous. Using fresh peaches in a smoothie is one of the best things I ever done. I felt like I was drinking fresh peaches. I used the skin and all so you get little chunks of skin which is so good and gives the smoothie a nice fleck of color. The mango adds a very light flavor to the smoothie. I used unsweetened coconut milk, which doesn’t give to much flavor, but I nice richness.
I’m kind of bummed. I made this smoothie when no one was home so I couldn’t give out taste tests. Well that’s ok, I drank the whole thing myself, I kind of didn’t want to share anyway.
- 2 medium (2-1/2" dia) peaches
- 1 cup, sliced mango, frozen
- ½ cup unsweetened coconut milk (from carton)
- Add all ingredients into a blender and process until smooth.
I’m kind of mad at myself, I wish I went back tot he Farmers Market to buy more peaches this weekend. I want another smoothie. So if you buy peaches save a couple for a smoothie recipe. You won’t be disappointed.
