It’s starting to get nice outside here and after a long day of working outside I want something, light, refreshing and super easy to make. So with that in mind, today I made for you Strawberry Pineapple Coconut Water Drink. It’s so good, naturally sweet and a crowd pleaser. The taste of the strawberries with a hint of pineapple really shines through. The coconut water combined with pineapple reminds me of a wonderful tropical getaway. I’m starting to drift in thoughts now. 🙂 This recipe makes a little over 8 servings, so it’s perfect for serving to friends at a BBQ.
This recipe is made with 3 ingredients, strawberries, pineapple and coconut water. It’s healthy, sweet and gives helps with dehydration because of the coconut water being filled with electrolytes. To make, I took 3 cups of frozen strawberries (1 lbs. frozen bag), 3 cups pineapple (1 lbs. frozen bag) and plain coconut water. All ingredients were bought at Trader Joe’s. In my Vitamix blender, I added all of the strawberries, pineapple and 2 cups of coconut water and processed until smooth. To be honest, I’m not impressed with the VitaMix, it always smells like it’s burning and it really works hard to blend, even with simple smoothies. But anyway, I recommend doing this in two batches it make it easier on the blender. I poured my mixture into a 12 cup pitcher.
Add remaining coconut water.
Stir until combined. Add some ice cubes or frozen strawberries to keep it chilled. Refrigerate until ready to serve. Be sure to stir it before you serve it. The coconut water will separate from the fruit.
- 3 cups strawberries, frozen
- 3 cups pineapple, frozen
- 6 cups coconut water
- In a blender add strawberries, pineapple and 2 cups coconut water. Blend until combined. For most blenders do this in two steps. You don't want to burn out your blender.
- Pour mixture into a large pitcher and add remaining coconut water. Stir until combined. Add a few frozen strawberries to keep it chilled. Refrigerate until ready to drink. Note: Be sure to stir it before serving.
This drink is so good and great to have after a workout too!
