Pork with Sweet Potatoes & Apples in Crockpot

Hi Everyone,

I have to admit, since I cooked my ham in the Crockpot, I realized how nice it was to have dinner done without hardly any work.  So while on my holiday break I decided to pull out the Crockpot and make an easy dish using the ingredients that I had in my house.  I have to tell you I so need to go grocery shopping.  I had this big plan of shopping for all healthy ingredients, but the cold weather has kept me in the house.  It’s hard to leave when you have no real reasons to leave.  So today I have for you the most tender pork that has been slow cooked all day with sweet potatoes and apples.

This dish is amazing.  It’s sweetened up by the sweet potatoes and apples and it’s savory from the onions and rosemary.  I just love adding a pinch of rosemary in my dishes.  I am really happy with this recipe.  The juices from the pork and apple juice with the herbs and spices is really nice to drizzle over the pork.

For the sweet potatoes, I served them in a separate dish and to add a little bit of texture I added a few dried cranberries which complement the sweet potatoes.  One of my favorite things is cooked onions, which adds so much flavor and ohhhh, the apples adds a nice touch of flavor.

I was pretty happy that the pork stayed in one piece when I pulled it out of the Crockpot.  I didn’t really want it shredded.  I picked up my pork from Costco.  It is a Pork Shoulder Sirloin Tip Roast.  It’s 98% fat-free, only 100 calories for 4 oz. and perfect for Crockpot cooking.  Here is a picture of it when I took it out of the Crockpot.

A tender pork that has been slow cooked in apple juice, onions, apples and sweet potatoes.
Recipe type: Pork
Serves: 4 servings
  • 16 oz Pork Sirloin Tip Roast
  • 1 large onion, peeled, roughly chopped
  • 2 cups sweet potato, peeled, chopped into bite size pieces
  • 3 medium gala apples, seeded, chopped into bit size pieces
  • 1½ cups apple juice
  • ½ tsp ground pepper
  • ¼ tsp. salt
  • ¼ tsp. thyme
  • ¼ tsp. rosemary
  • dried cranberries (optional)
  1. In a large Crockpot, add pork and surround it with onions, sweet potatoes and apples. Top with apple juice and sprinkle with ground pepper, salt, thyme and rosemary.
  2. Cook on low for 7-8 hours or on high for 5-6 hours.
  3. Take pork out and slice it and place on a platter and drizzle with juices from the Crockpot. With a slotted spoon take the potatoes, onions and apples out and place in a bowl. Add a few dried cranberries if you desire.
  4. Serve immediately.

I love simple meals like this and it is perfect for a weeknight meal.  Super easy and very filling and loaded with lots of flavors.
