Toffee Brownie Brittle

I was at Trader Joe’s last week and they have anew product, Brownie Crisps.  I loved them.  I thought why not try making my own at home and use the toppings that I love?  I did an Internet search to see how to make Brownie Brittle and I found a great recipe from King Arthur’s Flour.  I gave a try and I was not disappointed at all.  They turned out amazing.  Not quite the same as Trader Joe’s, but honestly I think better because of how fresh it tastes.

The pictures on this post does not do this sweet treat any justice. But I will tell you the Brownie Brittle is more on the soft side. It’s chewy, sweet, chocolaty and crunchy from the topping. Everything I love. For the recipe, King Arthur said to use chocolate chips. I decided to use Heath Toffee Bits that I bought in the baking section of the grocery store. I love Heath Bars and I thought that it would be great on my brittle and I was right.

When making the brittle, I mixed a simple batter of egg whites, flour, cocoa powder, sugar and canola oil, along with a few other ingredients. I mixed it up and spread onto my baking sheet. I took a picture and placed it on Instagram for you to see.  When baking the Brownie Brittle, they puffed up.  They kind of remind me of a flat brownie.  But trust me, they taste amazing.  Just before the brittle was done, I scored the batter so I could easily break it.  I still felt the need to use the knife to cut it when it was cooled.  The recipe makes about 35 pieces.

A simple, chewy, chocolaty flat brownie that is made with toffee bits.

  • ½ cup Flour, white
  • ¼ tsp Salt
  • ¼ tsp Baking Soda
  • 2 large Egg white, fresh
  • ¾ cup Granulated Sugar
  • 2 tbsp Cocoa, dry powder, unsweetened
  • 4 tbsp Canola Oil
  • ½ tsp Vanilla Extract
  • 1 tbsp. Vanilla Protein Powder (or dry non-fat milk)
  • 1 cup Toffee Baking Bits, divided
  1. Preheat the oven to 325°F.
  2. Line a baking sheet with parchment and lightly spray with cooking spray. Set aside.
  3. In a small bowl; whisk together the flour, salt, and baking soda. Set the mixture aside.
  4. In a medium-sized bowl, whisk the egg whites until frothy. Add the sugar, cocoa powder, oil, and vanilla, beating until smooth. Whisk in the protein powder, then the flour mixture.
  5. Stir in ½ cup of toffee bits
  6. Spread the batter on the prepared baking sheet. With a spatula or dough scraper to spread it as thin as possible.
  7. Sprinkle the remaining toffee bits on top of the batter.
  8. Bake the brittle for 15 minutes. Remove it from the oven, and cut it into squares using a knife, or rolling pizza wheel; don't separate the pieces.
  9. Return the pan to the oven, and bake the brittle for an additional 5 minutes. Remove it from the oven, and cool on the pan.
  10. When the brittle is cool, break it into pieces. Store airtight at room temperature.
I used protein powder in place of non-fat milk. It worked out nicely.

When making this recipe, you could use any kind of mix ins.  Nuts, chocolate chips, peanut butter pieces and so on.  The possibilities are endless with this recipe.  If you like Brownie Brittle or never had it, you should give this recipe a try.  It’s so easy!
