It’s been awhile since I posted a Yum Yum Wednesday post. Today I am re-sharing with you one of my all time favorite summertime salads Caprese Chicken Panzanella Salad. It’s made with fresh tomatoes, mozzarella cheese, basil, homemade croutons and chicken. It’s a wonderful compliment to a meal or to have as a meal in itself. I love this salad, it’s truly one of my favorites and I could eat it almost every day.
I also have some new items that I have tried to share with you.
First off is KRAVE Jerky! I love this jerky, they have so many flavors to choose from. Plus it’s not only beef, but they also carry turkey, and pork. This is a nice healthy snack that is loads of protein, low-fat and gluten-free. The flavors include Lemon Garlic Turkey, Chili Lime Beef, Black Cherry Barbecue Pork, Sea Salt Beef, Basil Citrus, Sweet Chipotle, Pineapple Orange, and Grilled Sweet Teriyaki. My favorite flavors are the Vlack Berry Barbecue Pork and the Sweet Chipotle. They are soft and tender too. They make for a great snack. The second new item I tried were these fantastic Moringa Super Food Bars by health foods company Kuli Kuli. Moringa Super Foods Bars are vegan, GMO-free and gluten-free Moringa Super Food Bars are made with pure, wholesome ingredients and are available in three delicious flavors:
Crunchy Almond:
Plump dates and a tad of agave nectar add a hint of sweetness to a delicious moringa and almond medley.
Black Cherry:

The last new item that I tried is from one of my favorite companies Peanut Butter & Co. It’s their brand new Powdered Peanut Butter. I am a huge fan of powdered peanut butter and tickled pink that now Peanut Butter & Co now makes it. It’s only 45 calories per two tablespoons and contains only 1 gram of fat, 5 carbs, 2 grams of fiber and 5 grams of protein. To make it you just add 1 tablespoon of water to two tablespoons of powdered peanut butter. You can use it in smoothies, shakes, eat with an apple and more. It comes in 4 flavors: Vanilla, Chocolate, Plain and Flax & Chia. I was sent a couple of sample to try out and have not seen them at the store, but I am sure they will be appearing soon. Based on my experience on trying this recipe, I would suggest the following: I suggest using block whole milk instead of fresh mozzarella. There is more moisture in fresh mozzarella and the salad could get soggy if you fresh mozzarella, especially if you are not serving it right away. If you are serving it right away you could use the block mozzarella which is shown in this salad and small little mozzarella balls. Just pat them dry with a paper towel first before adding them to the salad. You can toast them in the oven for a few minutes on baking sheet if you prefer as well.
