I have to tell you it has been mighty hot out. We have been in the mid 90’s to 100’s and the heat is taking a toll on me. When it gets like this, I don’t have the desire to make dinner. I bet you know what I am talking about! So tonight I made a quick one dish meal that is filling, cheesy, full of protein and a HUGE hit with my family! It’s my Broccoli & Chicken Mac and Cheese. Mmmm, Mac & Cheese.
This recipe is made with Annie’s Homegrown Shells and White Cheddar Macaroni and Cheese, fresh broccoli and chicken. The broccoli and chicken take the basic Mac & Cheese up a level and makes for the perfect one pot meal. I love the little chunks of broccoli, which also adds a fabulous color, plus the chicken is so tender that it truly makes for a great meal. It kind of reminds me of a pasta Alfredo, one of out favorites. My Husband shocked me and at almost ate whole thing. He just loved it and I think you will too!
For making this recipe super quick, I picked up a couple of boxes of Annie’s Homegrown Macaroni and Cheese, a rotisserie chicken and some fresh broccoli florets. I cooked the Macaroni and Cheese according to the directions and at the 6 minute mark; before the pasta was done, I added my broccoli to the water and cooked it for 3 minutes more. Once I drained the pasta; in the same pot I made my cheese sauce. I happened to be out of milk, so I used unsweetened coconut milk, which worked perfectly fine. I stirred my pasta into the cheese sauce and added my chicken. That’s it, dinner was done!! The whole thing took under 20 minutes!
I am not one for boxed Macaroni and Cheese, but I am in love with Annie’s! To me it tastes homemade and it’s quick, and made with organic pasta. I am proud to serve Annie’s Homegrown to my family. I even leave Annie’s Homegrown Snack Packs on the desks of my co-workers. They love the surprise and one co-worker, said he loves Annie’s and only gives his son Annie’s snacks. I happened to take a sneak peek in a meeting at work and what did I see? My co-worker snacking on Annie’s Homegrown cookies. lol Those little bunnies are for not just for kids!!
- 2 boxes Annie's Homegrown Shells White Cheddar Macaroni and Cheese
- 1 heaping cup broccoli florets, cut small
- 6 tbsp. milk of choice
- 2 tbsp. butter
- 1 cup chicken, cooked (about 8 oz)
- In a large pot, add 12 cups of water. Over medium heat, bring to a boil. Add pasta and set the time for 6 minutes; stir occasionally. Once timer goes off, add broccoli and set timer for 3 more minutes. Drain pasta and broccoli in a colander.
- In the same pot you cooked your pasta and broccoli and add butter and milk. Over low heat, cook until butter is melted. Stir in both packets of cheese from Annie's Shells White Cheddar. Stir until smooth. Take the pot off the heat.
- Stir in pasta and chicken. Serve immediately.
