I am so excited for today’s recipe! Sunday Supper has teamed up with the fabulous Gallo Family Vineyards to celebrate National Moscato Day, which is May 9th. I have 3 top favorite wines and I have to tell you a secret, Moscato is in my top 3, coming in next to Zinfandel and Chardonnay! Another reason why I love today’s recipe is because a year ago I made the most amazing Strawberry Shortcake ever, using GFV Pink Moscato! I kid you not, it was a huge hit with my family and co-workers. What made it so great was the strawberries were cooked in Gallo Family Vineyards Pink Moscato. They were the best strawberries ever! I was so in love with that recipe that it inspired me to make today’s recipe, which is Moscato Mixed Berry Pie. OMG!!! In my opinion this is the best berry pie ever. So let’s get the celebration started!
This pie is light, sweet and chock full of fresh, plump, berries. I was pleasantly surprised on how sweet the blackberries were. Now that strawberries are starting to come in season they are sweet and juicy, which makes for a perfect pie. In this pie I used blackberries, raspberries and strawberries. You can of course use any kind of berries that you like. I debated on adding blueberries, but I ate way too many this past season and I am over them, at least for now. My heart belongs to strawberries once again.
If you’re not a pie maker, this recipe will change your mind. I did cheat a little and used an already made pie crust. It’s so much easier and believe me, I am not very good at making my own pie crust. I baked the pie crust first, then I sautéed my berries in a skillet with sugar, lemon, cornstarch and of course the star of the show Gallo Family Vineyards Pink Moscato. Just to let you know that the alcohol will burn off while cooking the pie so you don’t have to worry about it when serving to young adults. I cooked my berries until thick and juicy, and then I added it to my baked pie crust and let it cool. That is it! How easy is that? Now I have to show you a cool picture that I took, of my ingredients before making the pie. I love this picture.
If you never had Gallo Family Vineyards Pink Moscato you are in for a surprise. It’s a light-bodied wine, with hints of fresh red berries with a little kick of citrus. Perfect for cooking with berries. It also makes for a nice light summery drink, which is perfect for a nice summer evening. I am so thinking of summer right now.
After you have let the pie cool, be patient when cutting it. The first slice is a little sloppy, but the rest turns out perfect. Since the berries are so fresh and I did not add a lot of ingredients, they may fall off the side of the pie. Trust me, it doesn’t matter. This berry pie tastes amazing! It goes great with some whip cream or a scoop of vanilla bean ice cream. Yum!
- 1 Single Pie Crust (homemade or already prepared)
- 6 cups mixed berries (I used 3 cups strawberry, 1 cup blackberries and 1 cup raspberries)
- ½ cup sugar
- 2 tbsp. lemon juice
- 3 tbsp. cornstarch
- ½ cup Gallo Family Vineyards Pink Moscato Wine
- Bake pie crust: Follow directions for single pie crust. I used Pillsbury, which is bake at 450 degrees for 10 minutes.
- Once pie crust is baked, let it cool.
- Meanwhile, in a large skillet, add berries, sugar, lemon, cornstarch, and GFV Pink Moscato Wine. Over medium-low heat cook the berries until thick and juicy, about 8- 10 minutes. Stirring constantly. Let the berries cool and add to cooked pie crust.
- Refrigerate for at least 2 hours before serving.
Pink Moscato – My favorite; a nice, light wine with hints of fresh berries with a touch of orange.
Red Moscato – A sweet wine with flavors of fresh peaches that ends with a nice berry finish.
White Moscato – A sweet, light, crisp, refreshing wine with flavors of peaches, honey, and fresh citrus fruit.
