Next month is Cinco de Mayo and I have to admit that it is one of my favorite cooking holidays because I just love Mexican food. I could eat it everyday and be completely content with it. Today I thought I would share with you one of my favorite all time drinks with you, the margarita. But of course, I made it a skinny so we can drink it without feeling like we are overindulging.
My margarita is made with fresh strawberries, blackberries and raspberries, and flavored with fresh mint and lime. Of course we can’t forget a little shot of tequila. You can also make this drink virgin, by skipping the tequila and adding a pinch of water. This drink is light, refreshing and a sure hit for your Cinco de mayo celebrations. However, I can see sitting pool side drinking these too. 🙂
To make this recipe, I used Crisp Cooking prep tools for easy preparation. To store my berries I used the Crisp Cooking 3 pack Berry Baskets. I like these baskets because they store nicely in the refrigerator and they are big enough to hold all of my fruit. They are great for storing grapes in too!
I also used the Crisp Cooking 4 in 1 Zester for easy grating of the lime. I love this new tool and I will use it all of the time. It comes with two zesting blades, plus a knife side of the tool that scores the fruit into the perfect slices, while the zesting side creates fine ribbons of zest. This is a must tool for the kitchen.
For easy cutting of the peppermint leaves I used the Crisp Cooking Herb Mincer. You have seen this on my site a few times. It cuts fresh herbs beautifully and would be perfect for cutting cilantro for your salsa or guacamole.
- 1 cup strawberries
- 1 cup blackberries
- 1 cup raspberries
- 1 lime, juiced and zested
- 4 peppermint leaves
- 1 oz. tequila
- 1 tsp. sugar (optional)
- 1 cup ice
- Add all ingredients in a blender and process until smooth
