Hi Everyone,

To continue with my healthy living and my “Me” week, I decided to make myself a healthy, feel good salad just for me.  It is so perfect for lunch or dinner.  It’s light, refreshing, full of flavor and a breeze to make.  Let me share with you my Green Protein Salad.

My salad is chock full of goodness!  It has romaine lettuce, spinach, edamame beans, cucumber, avocado and a big dollop of jalapeno hummus.  Of course you could use any kind of hummus you like for the salad, but I just love my jalapeno flavored hummus.  I made this salad because I was in need of something healthy and nutritious and I am really trying to be better this year. So far so good!


To make it fun to make, I used my new prep tools from Crisp Cooking.  For the lettuce I used my new Lettuce Knife  The Lettuce Knife is designed with a 7 in. blade that will accommodate even large heads and bunches of greens and lettuce. It is also a perfect cutting tool for slicing soft produce items such as tomatoes, mushrooms or strawberries. I simply love it and it cleans easy too!

For the cucumbers I peeled my cucumber with my Serrated Peeler which makes for a nice, clean peel.  I have admit this is my favorite peeler ever!  You don’t need a lot of pressure to peel your vegetables, plus it gives it a nice edge.  You can also use it on soft vegetables like tomatoes.  It peels like a dream. I love it!

Of course when your making a salad a Straight Pairing Knife for cutting your vegetables. I love this knife.  I use it all of the time.  I keep it right on my counter for easy grabbing.  It cuts everything perfect and without effort.

It is so much fun making a nice healthy salad when you have fun cooking tools.  I even have a set of nice Salad Tongs, but I didn’t use them for this recipe.  I normally don’t use tongs, unless I am serving a big group.  It’s normally just my Husband and  I, oh and in case you’re wondering, he did not have any of my salad. His words were, it’s to healthy for me.  lol

To keep my salad nice and fresh I squirted it with some fresh lemon.  It compliments the flavors of the vegetables perfectly.  Oh and in my recipe I added scallions, but after I revamped my recipe and I was eating my salad, I realized I forgot the scallions.  The salad was good without them, but it would add a nice twist of flavor.

A light, refreshing, healthy salad made with spinach, edamame beans, avocado, cucumbers and your favorite hummus.

Serves: Approx: 4 cups
Ingredients
  • 2 cups romaine lettuce, chopped
  • ½ cup spinach, fresh
  • ¼ cup scallions, chopped fine
  • ½ cup edamame beans, shelled
  • ½ cup avocado, sliced
  • ½ cup cucumbers, peeled, sliced
  • juice from half a lemon
  • 1 heaping dollop of your favorite hummus
Instructions
  1. Add all vegetables in a bowl. Top with lemon juice and add a dollop of hummus in the center.
Notes
No calories today, it depends on the calories of the hummus you used.

I really do love salads like this.  I love the color, the flavor and how good I feel after I eat it.  Now I won’t feel guilty when I have a piece of chocolate.  lol
