Taco Casserole #SundaySupper

Hi Everyone,

Today for #SundaySupper we ares sharing with captivating casserole recipes. I have to admit I do not make too many casseroles. But today’s recipe will be one that will be in my monthly meal rotation. Today I have for you a simple taco casserole recipe. Amazing!!

This casserole tastes like a deconstructed taco. It is thick, hearty and even though it is 4 servings, it is pretty darn filling. My family went absolutely bonkers over it.

It’s made with crushed tortilla chips, lean ground beef, chunky salsa and lots of hot bubbly cheese. Not only does it make for a good dinner, but it would be great to serve a Super Bowl party.

I just made my beef mixture, topped it with cheese and baked it. Top with tomatoes and serve with lettuce and sour cream. Well I used plain greek yogurt instead of sour cream. Trust me know one knows the difference. You can top it with the lettuce, but I served it on the side. Since I have leftovers, I just re-heat in the oven until the cheese is hot.

A simple casserole dish made with ground beef, salsa and cheese that was baked till the cheese was hot and bubbly and topped with fresh tomatoes and served on a bed of lettuce. deconstructed taco at it;s best.

Serves: 4 large servings
Ingredients
  • 1 lb lean ground beef
  • 2 tbsp. taco seasoning
  • ¼ cup water
  • 2 cups chunky salsa (I used Trader Joe's)
  • 1 cup (2 oz) coarsely broken tortilla chips
  • 2½ oz (2/3 cups) cheddar cheese
  • 1 medium tomato, seeded, chopped
  • 1 cup lettuce, shredded
Instructions
  1. Preheat oven to 350 degrees
  2. In a large skillet add ground beef and cook until no longer pink;about 7 minutes. Drain fat if there is any. Add taco seasoning and water. Cook until the water is evaporated. Turn heat off and stir in salsa.
  3. In a baking dish (9 x 10), add broken tortilla chips (enough to cover the bottom of the baking dish). Top with ground beef mixture. Top with cheese. Bake in oven for 20 - 25 minutes, until cheese is bubbly.
  4. Top with lettuce and tomatoes. Note: If you plan on having left overs, omit the lettuce and place the lettuce on your plate and top with beef and chips if desired.
  5. Serve with sour cream and/or hot sauce.
Notes
This can also be served with black olives, avocado, and hot sauce.

All I can say is yum!  One of my favorite foods in the world is tacos.  Having it this way is so much better because it fills me up so much and I am getting the meat and not so much of a shell.  It is simply a delicious dish.
