In two and half weeks it will be Christmas. I can not believe it! During this time of year, I think back to past holiday memories and think of what new ones will be created. You picture the holidays with friends, family, food feasts, opening presents and everything perfect. Well a lot of my memories were not exactly picture perfect. Now don’t get me wrong, they are great but not picture perfect. Let me explain. I remember one year, when my sister was about 5 years old. We went downstairs on Christmas morning and what did we see? My sister opened every present under the tree. I remember my Mom and I re-wrapping the presents before my Dad woke up. lol That is one memory I will never forget. Another memory I have is when I was in my 20’s, I had a family Christmas party at my apartment. Everyone was giving my dog Doodles, scraps from the table and of course me not knowing, gave her little treats too. Well low and behold, she got sick, and nothing like I have ever seen before. I won’t describe it to you, but it’s still a Christmas memory that is talked about even today. But Christmas memories, good or bad is what you make it out to be. I love them all and I can’t wait to see what crazy memories will happen this year. My Christmas tradition that I share with my family while opening presents is having mimosas and croissants with a special side treat, like holiday puppy chow or mini cinnamon rolls. It’s a tradition that I know Little Jenny will share with her own family one day.
Today I made for you Lemon Pound Cake. This doesn’t scream holidays, but it is a gift that I am excited to give. I have tried making pound cake for months and it never turns out for me, but finally I created a recipe that does. It’s light, buttery, perfect balance of lemon flavor and a new family favorite. You really have no idea how proud I am of this recipe.
I paired my Lemon Pound Cake with some berries, and a glass of Gallo Family Vineyards Limited Edition Holiday Blends Mixed Berries and Chocolate Wine. The wine is amazing. It’s Merlot wine with a flavors of mixed berries and a hint of chocolate. It would make a beautiful compliment to your holiday table. Plus I love how festive the label is.
To make the pound cake it’s pretty easy. I decided to make it pretty by baking it in a bundt pan that my Mom bought me for Christmas last year. I think it’s so festive. You could also make it in a tube pan or loaf pans if you desire. Did you know that pound cake got its name by using a pound of butter and a pound of sugar? My recipe doesn’t contain that much butter and sugar, but it tastes like it does. I think you will be pleased with the outcome.
- 2 cups sugar
- 1 cup (2 sticks) butter, softened
- 4 eggs
- 3 cups all-purpose flour
- ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ¾ cup buttermilk (see notes)
- 1 tbsp. freshly grated lemon zest
- 1 tbsp. lemon juice
- Glaze
- 1¼ cups powdered sugar
- 2 teaspoons lemon juice
- 1 to 2 tablespoons milk
- Heat oven to 325°F
- Grease and flour 12-cup Bundt pan or 10-inch tube pan; set aside.
- In a small bowl, add flour, baking powder, baking soda and salt; mix well, set a side.
- Combine sugar and butter in bowl at medium speed, scraping bowl often, until creamy. Continue beating, adding 1 egg at a time, until well mixed.
- Beat at low speed, gradually adding flour mixture alternately with buttermilk and scraping bowl often, until well mixed. Add lemon zest and 1 tablespoon lemon juice. Continue beating until well mixed.
- Spoon batter into prepared pan. Bake 55-65 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Invert onto serving plate; cool completely.
- Stir together powdered sugar, 2 teaspoons lemon juice and enough milk for desired glazing consistency in small bowl. Drizzle over cooled cake.
