Well this week I am heading to Pennsylvania as some of you know and I am trying to use up the ingredients that I have in the kitchen, so they don’t go bad. I thought the perfect way for me to preserve my fruit was to make some yummy, good for you jam. When I think of jam I think of the episode on Friends where Monica was trying to get over a man, so she said she is making jam. I don’t recall the exact words, but it was something like get rid of the man and make some jam. I thought it was funny. So today I may not be getting over a man, but there is no reason why I can’t make jam?
This jam is healthy, all natural and is simply perfect with peanut butter. I made my jam with fresh strawberries, blackberries and raspberries. To sweetened it up I used honey and to thicken it up and add a boost of fiber and protein I added some chia seeds. This jam is the cats meow! Yeah, I know that is so old school. lol
- 4 cups mixed berries (I used blackberries, strawberries & raspberries)
- 1 tbsp. lemon juice
- 2 tbsp. honey
- 2 tbsp. chia seeds
- Add berries, lemon juice and honey to a large pan, cook until the fruit break apart. With a spoon or a fork, mash the fruit while stirring. After about 7 minutes, add chia seeds and cook for another 2 minutes. Take off the heat and let cook for a about 10 minutes. Add to a storage container and refrigerate for up to two weeks. The jam thickens while it cools.
This jam would also make for a great gift. You can make it in advance and store in the refrigerator for up to two weeks. Just note because there is not a lot of sugar in this jam so I don’t recommend canning it.
