Pumpkin Cheesecake with a Twist

Hi Everyone,

One thing about this time of year that is important to me is saving money and watching what I eat.  With Christmas coming I try to put away as much money as I can.  I know you know what I am talking about.  But what’s even more important is watching what I eat.  With all of the holiday parties, extra servings of stuffing at the Thanksgiving table and foodie gifts that your guest brings you, I thought today I would try to help out and share with you a budget and belly friendly recipe, Individual Pumpkin Cheesecake.

Individual Pumpkin Cheesecake
This cheesecake turned out amazing! It’s light, creamy, perfect pumpkin flavor and with a drizzle of caramel and a dollop of whipped cream to give it an elegant look without breaking the bank. I went with individual cheesecakes because I think it is the perfect serving size for after your Thanksgiving dinner. You know how we all fill-up on turkey, mashed potatoes and stuffing. There is almost no room left for dessert and for me pumpkin cheesecake is the perfect dessert.  Plus at only 105 calories, you can’t beat that!

Individual Pumpkin Cheesecake
To save on money for making my cheesecake I shopped at my local Safeway. We have the most gorgeous Safeway ever. When it first opened up a couple of years ago I must have spent 2 hours shopping in it. As soon as I walk in, I grab my Starbucks, since they have one in the store, and then I run to the bakery because I can smell the fresh bread baking. Sigh… One of the best experiences ever. Anyway, I am getting off track here. So for saving money I bought Safeway brand ingredients. Safeway’s home brand is Lucerne.  Plus to give my pumpkin the ultimate pumpkin flavor I actually made my own pumpkin puree.  You don’t have to do this, but it really adds a true pumpkin flavor.  I just roasted it in the oven until it is fork tender then I pureed it in my blender.  So easy and I have leftovers for some more great pumpkin recipes.  I guess you can tell I kind of have a thing for pumpkin.
Individual Pumpkin Cheesecake Ingredients
To make the cheesecake I used 12 oz of Lucerne reduced fat cream cheese, two eggs, sugar, pumpkin, vanilla extract, seasonings and for the crust I used Safeway brand vanilla wafers. My whole grocery bill was $14.50, and I have enough ingredients to make a lot of other things. After all I bought a dozen of eggs and I only needed two in this recipe. Anyway, after I beat all of my ingredients together, I placed a vanilla wafer into a muffin cup and topped it with my batter. Baked it for 22 minutes and it was done. It does rise and then falls, and sinks just a little in the middle. That is why I added the caramel, because it holds in the center and makes for a great addition to the cheesecake.
Individual Pumpkin Cheesecake
You can make these little cheesecakes a day in advance. So it’s perfect for after dinner dessert. Nothing worse than when you’re cooking all day and then you have to make dessert. Now you don’t have to.  Make it a day ahead of time. The only thing you need to do is warm some caramel, drizzle it on top and add your whipped cream. I think your guests will be pleasantly happy with their elegant little cheesecake.

Individual Pumpkin Cheesecake
After writing this post, I think I need to test out my individual pumpkin cheesecake one more time. After all I have 12 of them and I don’t think anyone will notice that one is missing. 🙂

Have a great day!

Jennifer

These look so yummy and easy. I’m planning on using canned pumpkin in place of the sugar pumpkin puree. How much pumpkin puree would I need?

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Happy spooky Thursday! I added a few touches of Ha Happy spooky Thursday! I added a few touches of Halloween in my kitchen. I don’t do much Halloween decorations, but I just love to add it to the kitchen. Every time I go to the kitchen it makes me smile.
🦇
To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.

They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.

I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.

I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
