Today #SundaySupper teamed up with Idaho® potatoes to share with you fun and scary Halloween recipes made with Idaho® potatoes. Well I will admit, this was a tough task for me. I spent weeks thinking of what I could make. My thought was to make mashed potato brains, but my co-workers said make mashed potato graves. When they were describing it to me, they were telling me to make picket fence with potatoes, have a haunted house, make scary hands and the list went on an on. I was intimidated by their suggestions, because of two things, I’m not talented by design, I’m not even good decorating sugar cookies and I do not have very many patience. But I gave their idea a shot, and you know what? I am proud of Mashed Potato Grave.
Actually this ohhhh, so scary grave was pretty easy to make. Plus, what’s even better? They are edible too and taste great. Nothing like creamy, smooth potatoes. When making the recipe, the potatoes turned out cold, but I popped my whole display in the microwave and 2 minutes later, they were perfectly warmed and tasted perfect.
To make the Mashed Potato Grave, I made my normal mashed potato recipe, but when I blended it together, I didn’t add as much milk. I wanted my potatoes thick so they would be easy to mold. I reserved about 1/2 cup of potatoes to make my scary ghosts. With the remaining mashed potatoes, I added brown food coloring and beat it until it was all well blended. I added my brown potatoes to a plate and mounded it like a grave. To make the tombstone, I cut a piece of raw potato and wrote Rip on it with a red food coloring frosting. For the ghosts, I placed the white mashed potatoes in a baggie, cut off the corner and piped a ghost shape onto a piece of parchment paper. For the eyes and mouth I used peppercorns. All in all I am very pleased with my dish and I think kids would get a kick out of it too.
- 2 lbs. Russet Idaho® potatoes, peeled, diced
- 1 tbsp. butter
- ¼ cup non-fat milk
- brown food coloring
- 1 thin slice of raw potato (for tombstone)
- Red Food Coloring Pen
- 6 peppercorns
- Bring 4 cups of water to a boil. Add the potatoes. Cook until fork tender, about 20 minutes.
- Place the potatoes in a bowl, add butter and milk. Beat until combined. Reserve about ½ cup of potato (this is to make ghosts). Add brown food coloring until it is the color you desire. Note: You want the potatoes thick, not runny. You can also add salt and pepper too.
- Place the potatoes on a plate to make a long mound to resemble a grave. Take once slice of raw potato and with a red food coloring pen, write Rip on the sliced potato. Stick the sliced potato at the end of the mound to look like a grave.
- Take the reserved potatoes and place in a baggie. Pipe half the mixture onto a plate or parchment paper, to resemble a ghost. I shaped it up to look like a ghost. Add 2 peppercorns for the eyes and 1 peppercorn for the mouth. Do the same with remaining potatoes.
- This dish will get cold while making. I reheated it in the microwave for about 1½ minutes to warm up for serving.
I have to say I really had fun making this recipe and I bet it would be great to make with your kids too! This is one occasion that playing with your food is ok!
