Antipasto Salad #hometailgate

Guess what time of year it is? Football Season!! Woohoo! Now I am not getting excited for the Fall because football season is here, but really, I am really getting excited because it finger food season. My favorite thing about football season is tailgating, friends, family and well the food. I may not remember the great game, but I probably can tell you what I ate that day. I know so girly, right? Well with football season here, I thought I would share with you as tasty, quick antipasto salad with you that is simply perfect for your next tailgating party.

This antipasto salad is so simple to make and will sure be a hit at your next football party. It’s made with mozzarella balls, roasted red peppers, pepperoncinis, artichokes, cherry tomatoes and Sopressata an Italian Salami. But not only are you getting these wonderful vegetables, cheese and meat, but it is topped with a delicious vinaigrette. This is truly a perfect little Italian food tray.

Living in Buffalo most of my life one of the greatest pleasures that we had, was our Sunday night pizza with an antipasto salad. My favorite ingredient in the salad was the pepperoncinis. Love those little peppers, plus the cheese! But you could also add other ingredients like carrots and celery. For me, this tray are all the ingredients that I personally love and my friends did too.

The perfect tailgating finger food tray made with mozzarella balls, artichokes, peppers and Italian Salami, served with a simple balsamic vinaigrette..
Serves: 6 servings
  • 4 cups romaine lettuce, roughly chopped
  • 14 oz, can artichoke hearts, drained
  • 12 oz, jar roasted red peppers, rinsed, cut into strips
  • ½ cup pepperoncini, rinsed, whole or sliced
  • 4 oz. pkg, Sopressata
  • 1 cup cherry tomatoes
  • 1 cup mozzarella, fresh
  • Salad Dressing:
  • 4 tbsp. red wine vinegar
  • 1 tsp. dijon mustard
  • 1 dash pepper
  • 1 dash salt
  • ½ tsp. oregano, dried
  • ⅓ cup olive oil
  1. In a bowl, add red wine vinegar, dijon mustard, pepper, salt and oregano. Whisk in olive oil. combined.
  2. Arrange all of the salad ingredients onto a large platter. Serve with salad dressing.
