Restaurant Style Burger #SundaySupper

Hi Everyone,

Today for #SundaySupper we are celebrating beef!  We are going to show you different ways and cuts of beef.  Well when I heard that we were working with The Beef Checkoff, I knew right away what I wanted to make.  I have been on a BBQ kick for weeks.  I have been watching grilling shows, cook offs and Dinners Drive-Ins and Dives and after watching these shows I had to make a Restaurant Style Hamburger.  You truly have no idea how excited I was t make these burgers.  After watching all of these shows I learned the concept of making a good burger.  I took what I learned and I am sharing it with you today!  I have to tell you the burgers that I made are the best gourmet burgers I have ever made.  They truly are restaurant quality.  Not to toot my own horn, but I honestly think they are in my top 10 best burgers I have ever had and you know what, my family agreed. To make these burgers I used 8 oz of ground chuck (80/20) and 8 oz. ground sirloin (90/10). Normally I go for 96% lean but I wanted a good, juicy, thick burger. I actually went to my local butcher shop to make sure I got the best beef possible. I was right, the burgers turned out so juicy and the taste of the beef was OMG good! I cooked the burgers in a cast iron skillet (the key to the perfect burger) and used my spatula to flattened them and to give them a crusty bottom. Then I flipped my burgers and cooked it for 5 more minutes and then placed a thick cut of cheddar cheese over the top. Now this is my favorite part. Add 2 tablespoons of water in the skillet and cover the skillet with a lid. In 30 seconds the cheese melts to perfection! This was the moment when I felt I was working in a diner! Truly amazing!! The smell of the burgers cooking was out of this world. I’m drooling thinking of it. But wait that’s not all! In a separate skillet I cooked caramelized onions, after all a gourmet burger needs onions. The onions were tender, and so full of flavor without being overly greasy.  Now the rolls! I did something so bad, but I had to do it. I bought super soft kaiser rolls from the grocery store and I brushed them with a butter and garlic mixture to give them a different level of flavor. It was like a light garlic bread flavor, but not too over-bearing. Yes I used butter, but I had too! I was on the mission for the best burger ever. But a burger isn’t a burger without bacon! I added just one slice of bacon for a nice pinch of saltiness and well bacon flavor. Then the last thing I added was some spice. I made a chipotle sauce by using greek yogurt, mayonnaise and chipotle in adobo sauce. Dabbed a lot of it on my burger and oh my gosh, burger heaven. This my friends is what I call the ultimate burger. Since this was a treat I am not sharing calories with you! If you want to know, just ask.

Restaurant Style Burgers

A hearty, flavorful gourmet hamburger made with sirloin and chuck ground beef, topped with melted cheddar cheese, caramelized onions, bacon and a spicy chipotle sauce. This is truly a restaurant style burger
Serves: 3 5½ oz burgers
Ingredients
  • 8 oz. ground chuck (20/80)
  • 8 oz ground sirloin (90/10)
  • ¼ tsp. salt
  • ¼ tsp. ground pepper
  • 1 tbsp. canola oil
  • 3 slices cheddar cheese (I used thick slice)
  • ½ large onion, sliced thin
  • 2 tbsp. canola oil
  • 3 kaiser rolls
  • 2 tbsp. butter
  • ¼ tsp. garlic, minced
  • 3 slices bacon, cooked
  • Chipotle Dressing:
  • ¼ cup greek yogurt, plain
  • 1 tbsp. mayonnaise
  • 3 chipotle peppers in adobo sauce, diced
Instructions
  1. In a bowl, add ground chuck, ground sirloin, salt and pepper. Mix until well combined. Measure out 5.5 oz of beef, and shape into a patties. You should have 3 patties; set a side.
  2. In a skillet over medium heat; add 2 tablespoons of canola oil and onions. Cook until tender and caramelized; about 10 minutes. Put into a bowl; set a side.
  3. In a microwave safe bowl, add butter and garlic, cook in the microwave for 40 seconds until butter is melted; mix well.
  4. Cut rolls in half horizontally. With a pastry brush, brush the butter and garlic mixture to the insides of each bun. Place on a baking sheet and broil for 2 minutes, just until lightly golden. Be careful not to burn the rolls.
  5. In a cast iron skillet, add 1 tablespoon of canola oil. Add beef patties. With a spatula press the burgers for 2½ minutes until a crust forms on the bottom. Flip the burger and cook for 5 more minutes or until desired doneness. Top each patty with a slice of cheese. Add two tablespoons of water and cover the skillet. Cook until cheese is melted; about 30 seconds.
  6. Place burger on bottom piece of bun, top each patty with 1 slice of bacon, ⅓ of the onion mixture and chipotle dressing. Top with remaining half of bun. Serve immediately. Note: You can add lettuce and tomato if desired.
  7. To make chipotle sauce: In a bowl add greek yogurt, mayonnaise and chipotle peppers. Mix until combined. Note: Use more or less chipotle peppers for desired spiciness.
Notes
You can prep the ingredients ahead of time. I formed my patties the day before and covered and placed in the refrigerator until ready to cook.

I cooked my bacon the night before. By placing the bacon on a baking sheet, cooking in the oven at 400 degrees for 10 minutes. Drained the fat off the pan, flipped the bacon and cooked for 2 minutes more. Cover and store in the refrigerator. I reheated the bacon in the skillet for about 2 minutes to crisp up.

You can also make the chipotle dressing a day ahead.

Guys, these are the best burgers ever and honestly they didn’t take that long to make. I prepped all of my ingredients the night before and when I came home from work it took about 20 minutes and my burgers were done. So worth it! This was truly a treat to make and to eat! I can’t wait to make them again!! My best advice is to cook the beef in a cast iron skillet! I will be cooking my burgers like that from now on.
