Jennifer and I share a love for food and gardening and counting calories comes second to eating in moderation. She is an amazing cook! I love her site and stop by often for recipes and tips on healthy eating. My blog is about all things food from farm to table. I feel it is very important to know where your food originated and what goes into what you serve your family. Fresh, local organic produce always tops my list. Most recipes are 30 minutes or less.
In keeping aligned with healthy eating, I chose to share a salad with you today. This Cherry Chicken Salad is packed with fresh, in season dark sweet cherries in the salad and in the dressing!
Sweet cherries are packed with vitamin C and fiber and are a good source of Vitamins A, K and iron. I push cherry halves through a mesh strainer to juice. Add the leftover pieces to your salad or another recipe or eat as a snack! * Here’s a tip for getting those cherry stains off your fingers. Dip your fingers in white vinegar lightly rub in then while still wet, dip your fingers into baking soda and rub. The paste does the work. Repeat if necessary. Usually once and done!
- 2 cups cooked chicken, shredded
- ¼ cup finely chopped celery
- ¼ cup chopped pecans
- 1 cup sweet dark cherries, pitted and chopped (plus 6 to 8 whole for juicing)
- 2 Tablespoons olive oil
- 1 Tablespoon red wine vinegar
- 2 Tablespoons cherry juice
- 2 teaspoons honey
- ½ teaspoon fresh thyme leaves
- Salt and pepper to taste
- Mix chicken, celery, pecans, cherries and thyme together. Set aside. Whisk together oil, vinegar, juice, honey, salt and pepper. Pour over chicken mixture and stir to coat. Serve as a sandwich or over your favorite greens.

I think it would be amazing on so many different recipes!! Plus the tip on getting the cherry stains off your fingers is genius! I wish I knew that before I pitted all of my cherries and ummm, hand red fingers. 🙂
