Hi Everyone, Today for #WeekdaySupper we have to do a healthy recipe that is made 30 minutes or less. With summer here, I thought the perfect, healthy meal would be a watermelon salad chock full of strawberries and chicken. Yum! Both watermelon and strawberries are so plentiful and sweet right now that I simply can’t get enough. I have to tell you there is one thing I forgot on this salad and it’s the feta cheese. After I took the photos, I sat down to dinner and started to munch away and then I realized I forgot the cheese. I hate when I do that. So even though you don’t see cheese in the photos, you should add it, it gives the salad a nice , creamy, savory flavor. The salad is light, refreshing, healthy and perfect for a warm summer day. It’s made with fresh watermelon, chopped strawberries, chicken that is all placed on a bed of butter lettuce and topped with your favorite balsamic dressing. The sweetness of the watermelon and strawberries combined with a savory onion, feta cheese and balsamic dressing really come together for the ultimate summer salad. It would be wonderful for serving at your next barbecue. I have to say that I really like quick and easy meals like this. It makes for a wonderful weeknight meal. Plus you can so cheat on this meal by buying a rotisserie chicken and adding that instead of cooking your own. I grilled up a couple of pieces of chicken that I marinated in balsamic dressing. The flavor was fantastic! Just add to your grill over medium heat; cook one side of the chicken for about 7 minutes, flip and cook for 5 minutes more. Chop it up and place on your salad.
- 8 oz chicken, cooked, cut into bite size pieces
- 4 cups butter lettuce
- 2 cups watermelon, diced, seeded
- 1 cup strawberries, cut in half
- ¼ cup red onion, sliced
- 1 oz feta cheese
- ¼ cup balsamic dressing (I used fat free)
- Divide between two plates, lettuce, chicken, watermelon, strawberries, onions and feta cheese. Top with your favorite balsamic dressing.
- Note: For the chicken; I marinated it with balsamic dressing over night and grilled it for 7 minutes on one side and 5 minutes on the other.

I know crazy! You take your ingredients out, photograph, make pretty and then you go to sit down, take a bite and look on the counter and there is the cheese. Crappers! It happens way to often for me! lol
