Chicken Caesar Salad #SundaySupper

June 1, 2014 By Jennifer @ PB and P Design 50 Comments

Hi Everyone,

Today for #SundaySupper we teamed up with Davidson’s Safest Choice Eggs to share with you recipes using raw eggs.  Yah, I know sometimes using raw eggs gives a bad rap, but don’t worry these eggs are safe. The Safest Choice™ all-natural, gentle warm bath pasteurization process eliminates the risk of Salmonella in eggs without changing the nutrition or flavor. Davidson’s Safest Choice® Eggs are pasteurized, so they taste great and are safe for all your favorite egg dishes!  You have to love that!  So with that in mind I created a recipe that I have been dying to make, which is Chicken Caesar Salad.
Chicken Caesar Salad #SundaySupper
My Chicken Caesar Salad turned out amazing! It exceeded my expectations! It’s light, fresh made with homemade grilled croutons and let me just telling the most delicious Caesar dressing! The dressing is restaurant quality! It’s creamy, cheesy and has the perfect balance of lemon and garlic. I am very pleased with it!
Homemade Ceasar Saald Dressing #SundaySupper
Since I didn’t have croutons in the house I decided to make my own. I had a stale sourdough baguette, so I cut it in half and brushed it with olive oil and popped it on the grill for two minutes per side. Once it cooled, I cut it into bite size pieces. The taste of the sourdough and the grill flavor took these croutons up a level. It was so easy and so darn good! Think I’ll make croutons like this for now on.
Chicken Caesar Salad #SundaySupper
For the salad dressing I used garlic, dijon mustard, lemon juice, water, Davidson’s Safest Choice Egg yolks and olive oil. I processed it in my blender and stirred in some Parmesan Cheese. It is simply amazing and only took a few minutes to make. The dressing makes about 1 1/4 cups. I made extra for my salad the next day! I am soooooo making this dressing again and again. I love that I know the eggs were safe to use! I felt perfectly fine the next day!

A light, refreshing salad made with grilled croutons and homemade Caesar dressing.
Serves: 6 servings
Ingredients
  • 1 clove garlic, smashed
  • 2 egg yolks Davidson’s Safest Choice® Eggs
  • 1 tbsp. dijon mustard
  • ¼ cup lemon juice
  • 2 tbsp. water
  • ½ cup extra-virgin olive oil
  • ¼ cup Parmesan cheese, plus extra for garnish
  • Freshly ground black pepper
  • 16 oz chicken, cooked
  • ½ loaf sourdough baguette, stale if possible
  • 1½ tbsp. olive oil
  • 12 cups romaine lettuce, chopped
Instructions
  1. In a blender, add garlic, egg yolks, dijon mustard, lemon juice, and water. Process for 30 seconds and pour in the olive oil until smooth. Stir in Parmesan cheese. Place in the refrigerator until ready to use.
  2. To make grilled croutons: Cut baguette in half, brush with olive oil. Place on a grill over medium, low heat and cook each side for 2 minutes. Take off the grill and cut into bite size pieces.
  3. Evenly divide about 2 cups of romaine lettuce over 6 plates. Evenly divide the chicken over the lettuce. Add croutons over the lettuce and chicken and top with dressing and additional Parmesan cheese, if desired.

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.
🌿
One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.
🌿
For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.
🌿
Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.
🌿
Hope you enjoy this as much as I have making it.
Enjoy your day!
