Coconut Clusters

Hi Everyone,

I have a special treat for you today!  It contains two of my favorite ingredients, chocolate and coconut, oh yah!!  After all, those two together makes a wonderful combination, don’t you think?  Let me get down to it and share with you my recipe for the day,  Coconut Clusters!
Coconut Clusters
If you’re a fan of Mound Bars, you will LOVE these clusters. They are sweet, perfect size and just ahhhmazing! I made them as natural as I can, by using unsweetened coconut, coconut milk, coconut oil and just a tad  powdered sugar to sweetened them up. They are all covered in rich, creamy smooth dark chocolate that I received by Chocoley.

The clusters are a breeze to make too! Just add all of the ingredients, except for the delicious chocolate in a bowl, mix until well combined and roll into a ball. Once you do that, you freeze the balls. They kind of look like snowballs. You can check them out in my instagram page.  Once the balls have froze, I melted Chocoley dark chocolate in a double boiler and then rolled my balls into the chocolate. Let them harden up a bit and they are done.  I love how simple they are and I love how tasty they are too.
Coconut Clusters
It’s funny that in California they call these coconut clusters, Haystacks, but being from New York we call them clusters. I debated on calling them truffles, but I like clusters better! Funny how the say thing is called different names, just like soda. In New York we call it pop, in California they call it soda. I’m kind of getting off the subject of these delicious little balls.  Sorry about that!
Coconut Clusters
I took the Coconut Clusters to work and they were a sure hit! I made 24 of them and they were all gone. That’s pretty good considering there are only about 6 people in the office. I’m not the most perfect candy maker in the world, but I have to say these are pretty easy! I highly recommend them if you’re a coconut fan! Hmmmmmm…. it seems I have been making a lot of coconut recipes lately. I think I am on an official coconut kick!

A healthy, low calorie truffle, chock full of coconut and sweetened with a pinch of powdered sugar and rolled in luscious, rich, dark chocolate.
Serves: 24 clusters
Ingredients
  • 2⅓ cups coconut, shredded, unsweetened
  • ¼ cup coconut oil
  • ¼ cup coconut milk, unsweetened from carton
  • ¼ cup powered sugar
  • 1¼ cups Chocoley Dark Dipping Chocolate
Instructions
  1. Line a half baking sheet or plate with parchment paper; set aside.
  2. In a bowl, add coconut, coconut oil, coconut milk and powdered sugar. Mix until thoroughly combined. Take a teaspoon size amount of the coconut mixture and roll in the palm of your hand. Place coconut ball on parchment paper. Do the same with the rest of the coconut. Place in the freezer for 30 minutes.
  3. Melt chocolate in a double boiler. Remove coconut balls from freezer and immediately dip. Place bake onto parchment line baking sheet. Store in the refrigerator until ready to serve.

Coconut Clusters
I received a sample of Chocoley to try out and I am pretty pleased with it. The chocolate tastes amazing and melts like a dream. I didn’t need to do anything fancy to it, which I like. Quick and easy is the way to go when your making candy.

    This recipe looks amazing! I’m trying to roll the coconut balls, but they are turning to mush in my hands! lol! I wonder what I did wrong? I am going to cool the mixture in the fridge for a while and see if it will help make them more tacky. 🙂

    Is the coconut milk the thick canned type or the watered down type for drinking? I assumed carton meant drinkable type but wantedto make sure.

    The coconut clusters turned out great. I took them to a family reunion, and they were gone fast. Next time I will make a double or triple batch, since I know now how popular the chocolate clusters had become. I didn’t have the dark chocolate that was recommended. I used the kind you melt in the microwave. I’m sure the chocolate recommended is better. The recipe is so easy to make and very healthy for you. Thank you, Jennifer for the recipe. It certainly was a big hit.

      Hi Arleen, You can buy coconut oil at Trader Joes, most grocery stores and even Target. Coconut oil is made from coconut.

Today I am sharing with you a spring vignette that I created. I just love tulips this time of year. Though, they seem to be out all year at Trader Joe’s, which is kind of strange. I can’t wait until they get peonies and lilacs. My two favorites.

Even though it may not feel like Spring,  there is no reason why we can’t start prepping for it. It’s going to be time soon to plant flowers, add a floral wreath to the front door and of course a welcome mat to invite everyone to your home.

I wanted to share with you my new welcome mat that I got from @cocomatsnmore. They just had their Spring release and oh my gosh so many cute ones. I love there welcome mats. Happy Monday! I did a little bit of Spring cleanin Happy Monday! I did a little bit of Spring cleaning this weekend. I wanted to give my kitchen counters the less is more look.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.
