Today I have for a different kind of pasta salad that screams summer and picnic season. It is creamy, filled with vegetables and made with the adorable orzo pasta. Let me introduce to my tasty Farmer’s Garden Orzo Pasta Salad.
This salad is made with Farmer’s Garden™ by Vlasic® pickles. Now one thing I am is a pickle fan, but when I found out that Vlasic now makes a Farmer’s Garden style pickle in a mason jar, I couldn’t wait to try it! The pickles are a nice traditional dill pickle taste, but also contains carrots, peppers and garlic. A beautiful array of vegetables that will make your taste buds sing. After all who doesn’t like a nice pickle? After trying my first bite, I thought what could I make with these wonderful pickles? I had a few dishes that I thought of, potato salad, a salsa for hot dogs or hamburgers, but then I thought, change it up and make a pasta salad. I think I made the right decision.
After making the orzo pasta I added the diced up pickle chips into my salad, but I felt it needed a little more. So I added some mayonnaise, mustard and chives, bingo! I now have the perfect salad that will compliment any summer meal or picnic.
Have you ever had Farmer’s Garden™ by Vlasic® pickles? Here’s a little scoop, each Farmer’s Garden cucumber is hand-packed in a traditional mason jar and pickled using home-style canning techniques to lock in the bold, fresh taste. There are five delicious varieties of Farmer’s Garden by Vlasic pickles: Zesty Garlic Chips, Bread & Butter Chips, Kosher Dill Spears, Kosher Dill Halves and Dill Chips. I personally like the Dill Chips but the other varieties taste just delish!!
- 8 cups water
- 1⅓ cup orzo pasta
- 1 tsp. salt
- 26 oz. jar of Farmer's Garden Dill Chips, drained
- ½ cup mayonnaise
- 1 tbsp. mustard
- ¼ cup chives, diced small
- ½ tsp. ground pepper (to taste)
- Add water to a pot and bring to a boil. Add salt and pasta, stir and bring to boil. Cook uncovered, stirring occasionally. Drain well and pour into a large bowl.
- While pasta is cooling, cut the Dill Chips into bite size pieces. Stir into pasta, until combined. Stir in mayonnaise, mustard, chives and pepper, until well incorporated. Refrigerate for at least an hour before serving.

I have to say I really enjoyed this salad and my family did too. It’s different from traditional pasta salad and really gives a nice zip. It would really compliment any dish, especially hot dogs and hamburgers.
