You know what Monday is? One of my all time favorite days of the year, Cinco de Mayo. I love this Spanish holiday! All that spicy food, peppers, margaritas, chips, salsa and more. Oh boy!! I am in pure heaven. So today I thought I would share with you some of my favorite Mexican style recipes. So let’s get the party started with a drink. After all you need a nice skinny drink to have with chips and salsa.
First drink on the menu is the Sauza Rita – A margarita type drink that is a mix of limeade, beer and Sauza Blue Tequila. I was amazed on how tasty this drink was.
Skinny Lime Margarita with a side of Margarita Lime Guacamole – Oh yah! This is what I am talking about! I just love a classic lime margarita made with tequila, but if you add tequila to guacamole, it adds another dimension of flavor. You have to try it! It’s so good!! Guaranteed no leftovers.
Skinny Mango Margarita – This is one of my newest recipes and I love it. I was asked if you have to add tequila to it and the answer is no! This drink is awesome with tequila or virgin style. I just love it, it’s very light and refreshing!
Skinny Strawberry Margarita – I love this drink! It’s a simple classic and my go to summer drink! It has the perfect strawberry flavor and it’s only 104 calories, so you can have a couple of them completely guilt-free! Hey, just saying….
Now what goes with drinks? But appetizers!!
Fire Grilled Salsa – This salsa is a great use for veggies you have leftover in the fridge. I just grilled them up and puree them in the blender. Makes for a nice light salsa with a smoky flavor.
Grilled Jalapeno Poppers – This is such a great dish, made with cream cheese, chicken and cheese. I swear I could eat the whole batch of it!
Guacamole with a Kick – I fell in love with guacamole when I started blogging a few years ago and I haven’t turned back. This guacamole is light, fresh and is a tad spicy! It’s a perfect side dish or to top on tacos.
Hot Black Bean Dip – This is a great appetizer, it’s loaded with black beans, it’s warm, cheesy and delish! It is great for dipping or smearing on a tortilla.
Lightened Up Guacamole – I know we tend to over eat chips with our guacamole, so why not lightened up by adding greek yogurt to it? It’s completely guilt-free, so enjoy!!
Shrimp Stuffed Anaheim Peppers – Oh man, I forgot about this recipe. This can be a simple appetizer or served as a main dish. Loaded with shrimp, cream cheese, cojita cheese and served in a slightly spicy pepper. Yes please!
Taco Wontons – This is a hit with the family and so easy to make. Nothing like a low-calorie, tasty taco all in a wonton wrapper.
Taco Salad in a Taco Cup – I love this recipe! It’s little tacos served in phyllo dough and the best part is the dough doesn’t have to be pretty shaped, it bakes up perfectly. This was a huge hit with the family and me!!
Next up is side dishes and some that could also be the main meal!
Black Bean and Butternut Squash Quinoa Tacos – This is my kind of dish! It is so good, tasty and I used this recipe for days on tacos and topping on salad!
Black Bean Burger – Oh my gosh! I love black bean burgers and this one is amazing!! I love the flavors all together and top it with salsa and guacamole. Oh yes please!
Grilled Mexican Corn and Avocado Salad – This is one of my favorite summer time side dishes! I noticed that corn is coming in season and this is the perfect recipe to use it with! I can’t wait to make this again!
Roasted Squash with Mexican Black Bean Salad – This is such a pretty salad and the flavor is amazing! A wonderful combination of roasted squash, black beans, cheese and only seasoned with lime juice. There is so much flavor that you don’t need anything heavy with it.
Spanish Quinoa – This is the recipe that made me fall in love with quinoa! It is so flavorful and you don’t miss the rice with it. I took the classic spanish rice and used quinoa instead, just amazing!
Spicy Stuffed Mexican Pepper – I almost called this the Burn your Butt off Pepper, but it is so good! One of my all time favorite recipes. It’s made with black beans, cheese and enchilada sauce. Such a simple recipe with lots of flavor! It is so good!!
Now time for main dishes!!
Skillet Enchiladas – This is such a simple one dish meal and it was a huge hit with the family, plus me! It makes for a quick weeknight meal.
Slow Cooked Carne Asada – This is another easy dinner. It is Flank Steak slow cooked in a crockpot that has a tomato based salsa, topped with beer and served on corn tortillas. Yummy!
Garlic Lime Chicken Fajitas – This is a nice easy weeknight dinner made with McCormick Garlic and Lime Seasonings and peppers and onions. It’ so simple and tastes out of this world! One of my favorite dishes!
Grilled Pork and Bacon Wrapped Tacos – Bacon and Pork, um yes!!! This is a nice spin to changing up your tacos. I grilled my pork tenderloin with bacon wrapped around it and then chopped it all up and served it on a flour tortilla. You don’t need a lot of bacon to add flavor!!
Wow, that’s a lot of dishes!! I can’t wait to see what I create next for Cinco de Mayo this year.
