Smoked Beef Brisket with Carolina Rub

April 25, 2014 By Jennifer @ PB and P Design 8 Comments

Hi Everyone,

I told you I have been on a major barbecue kick lately and I can’t stop myself.  Last week I brought to you my Memphis Style Rub with Grilled Pork Tenderloin and was it mighty good, but today I am sharing with you Smoked Beef Brisket with Carolina Rub, aaaaamazing!!!
Smoked Beef Brisket with Carolina Rub
This may look like a big piece of burnt meat, but oh my gosh it is so good!! The meat may have cooked a pinch longer than it should have, but it was still fork tender and the skin was unbeatable! The rub that I made  has brown sugar, paprika, cayenne pepper, ground pepper, salt and a couple more ingredients. The rub is a little sweet and a little spicy and when it cooked on the brisket it made a wonderful, thick, caramelized  glaze. I think I’m in love!!  I might just like this better than my Memphis Rub, but not sure.  I’ll have to do a cook off with myself to test it out.  Sounds like a fun weekend for me!  You can check out the brisket when I put the rub on it.  Here’s the picture that I shot on Instagram.
Homemade Carolina Rub
To make the brisket, I added my rub to it and let it marinate for a couple of hours. You can do this for up to 24 hours. I cooked it on a charcoal grill because I believe that would give the brisket the best flavor. We heated the charcoal and once it turned to ash, we pushed it to one side of the grill. We placed the brisket to the opposite side of the grill with fat side up. Then we let it cook for about 5 hours, add more charcoal coals as needed. Cooking time depends on how big of a piece of brisket you have.

Prep time

Total time
5 hours 10 mins

A slow cooked, smoked brisket that has been covered in a sweet and spicy homemade Carolina Style Rub.
Serves: 24 oz
Ingredients
  • ¼ cup paprika
  • 2 tbsp. salt
  • 2 tbsp. sugar
  • 2 tbsp. brown sugar
  • 2 tbsp. ground cumin
  • 2 tbsp. chili powder
  • 2 tbsp. black pepper
  • 1 tbsp. cayenne pepper
  • 2 pound beef brisket
Instructions
  1. In a bowl, add paprika, salt, sugar, brown sugar, cumin, chili powder, black pepper and cayenne pepper. Mix until thoroughly combined.
  2. Sprinkle rub on to brisket, rub it in until the whole brisket is covered. You can refrigerate it for up to 24 hours if desired.
  3. If using a charcoal grill, heat the charcoal, once it turns to ash, push the charcoal to one side of the grill and place brisket over the opposite side (side without the charcoal) with fat side facing up. That way you are slowly cooking and smoking your brisket. Cook the brisket until tender enough to shred with your fingers; 5 hours, but it may take as long as 8 (cooking time will depend on the size of the brisket and heat of the grill). Note: You may have to add more coals. Just check on it every hour or so.
  4. Remove the brisket from the grill and let rest for 15 minutes. Transfer the brisket to a cutting board and thinly slice it across the grain.

Smoked Beef Brisket with Carolina Rub
I highly recommend using a rub when cooking your meat. The past couple of weeks was the first time that I started to use rubs and let me tell you it tastes great. The skin of your meat tastes restaurant style and truly in my opinion the best. Make your own rubs, like this one! There are so many options out there, make what you like. The next one I think is going to be super spicy! Just saying! he he

Have a fabulous weekend!! Hope you can get your grills going!

Toodles,

Jennifer

Oh you should try it. It’s a very simple recipe and brisket isn’t to bad priced if you buy it at Costco.

Curious how you say Sugar 0 when you have 4 tablespoons in the rub?

Hi, because the sugar level is so low that it registered as zero when I added the calculation.

    Umm…2 lbs of brisket?

That’s a pretty damned small cow.

Happy spooky Thursday! I added a few touches of Ha Happy spooky Thursday! I added a few touches of Halloween in my kitchen. I don’t do much Halloween decorations, but I just love to add it to the kitchen. Every time I go to the kitchen it makes me smile.
🦇
To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach
🦇
Have the best day!

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Have a wonderful day!

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20
🐾
Have a great day and happy napping!

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.
🍂
Have the most beautiful day!

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.
🎃
I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.
🎃
I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?

Happy Monday! Now I know what you are thinking, Ha Happy Monday! Now I know what you are thinking, Halloween and Fall decor in July? Have I lost my mind? Nope, I haven’t, but on Saturday @krumpetshomedecor launched their Fall and Halloween! Soooooooo many cute pieces, I’m obsessed!
🎃
It’s hard to imagine Fall in a couple of months when the temps have been in the 100’s, but it will be here soon. Time to start planning!!!
🎃
How I styled my bar cart is just an idea. Once I pull out my Fall/Halloween bins you will see these pieces in other parts of my home. The black wooden witches books will go in my kitchen to go with my black and white kitchen that I do every Halloween. The witches broom will also go on my shelf in the kitchen as my boys 🐶🐶 have been eyeing it up. I need to keep it away from them.
🎃
The beautiful reversible art work will go in my living room, as I like to do oranges and neutrals for fall. The 3 wooden pumpkins will go on my console table. I have it all planned out in my head. I’m kind of excited, but I will enjoy summer a little while longer.
