Banana Carrot Cake Bread #SundaySupper

April 20, 2014 By Jennifer @ PB and P Design 58 Comments

Happy Easter!

Today for #SundaySupper we had to make a recipe for Passover.  So I thought what recipe screamed Passover?  Then it hit me carrot cake!  But not just carrot cake, how about Banana Carrot Cake Bread with Cream Cheese Frosting!  Now that is what I am talking about!!
Banana Carrot Cake with Cream Cheese Frosting
This bread is just amazing!! It’s not heavy, it’s moist, full of freshly grated carrots, raisins, pecans and has the most subtle flavor of banana. It’s truly a remarkable bread!! But one thing this bread has that I love, love, love is the cream cheese frosting. Oh my gosh amazing! I swear I could just spoon the frosting. If love came in frosting form, this would be it!!
Banana Carrot Cake with Cream Cheese Frosting
This bread is perfect for Easter Brunch or to have anytime of the year. I don’t know why we have things like carrot cake only around Easter? But then again, maybe that is just me? Anyway, this bread also freezes nicely too, however I don’t recommend frosting it then freezing it. My Friends, Marlene and Billie at #SundaySupper gave me some great advice. I asked, how do I store bread that I frosted? Do you leave it at room temperature or do you refrigerate it? Refrigerate it was the answer! Just wrap it in aluminum foil and pop in the fridge. Poke the bread with toothpicks to keep the frosting from sticking to the foil. It worked like a charm. However, the bread does dry out just a tad bit when it’s refrigerated, but freshly eaten on the day you make, it’s drool worthy!

  • ¾ cup whole wheat flour
  • ½ cup all purpose flour
  • ¾ tsp. baking soda
  • ¾ tsp. baking powder
  • ¼ tsp. salt
  • 1 tsp. ground cinnamon
  • ¼ tsp. ground cloves
  • ¼ tsp. freshly grated nutmeg
  • 1 banana, mashed
  • ⅓ cup granulated sugar
  • ½ cup apple sauce, unsweetened
  • ½ cup egg substitute or 2 eggs
  • ½ cup pecans, finely chopped
  • ½ cup raisins
  • 1 cup finely grated carrot (from about 1 large carrot)
  • Cream Cheese Frosting:
  • 4 oz. light cream cheese, softened
  • 3 tbsp. butter, softened
  • 1 tsp. vanilla extract
  • ¾ cup confectioners' sugar
Instructions
  1. Preheat oven to 350 degrees
  2. Spray a 9 x 5 loaf pan with cooking spray or 3 mini loaf pans; set aside.
  3. In a bowl, add flours, baking soda, baking powder, salt, cinnamon, cloves, and nutmeg; mix until well combined; set a side.
  4. In a large bowl, add banana, sugar and apple sauce; beat until combined. Beat in eggs. Stir in pecans, raisins and carrots; just until combined. Slowly stir in flour mixture, just until incorporated. Do not over mix.
  5. Pour batter into prepared pans and bake for 40 - 50 minutes for a large loaf or 25 - 30 minutes for mini loafs. Insert a toothpick into the center of the bread, if it comes out clean the bread is done.
  6. Let the bread cool for about 10 minutes in pan; then take out of the pan and let it cool completely on a cooling rack.
  7. To make cream cheese filling, in a mixing bowl beat cream cheese, butter, vanilla extract and confectioners sugar until light and fluffy. Spread over cooled bread.

This sounds heavenly! I love a good loaf cake. You could make the frosting and store it in the refrigerator and store the bread at room temperature and just frost what you’re eating too. Plus, that way you could take a little extra frosting and no one would know the difference 🙂

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!

Downlite Bedding was kind enough to give us a 20% discount: DYGEN20

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
