Acai Breakfast Bowl

Hi Everyone,

Instead of Smoothie Monday, today I am bringing you a smoothie in a bowl Monday.  The inspiration for this recipe came from a restaurant that I have gone to a few times, its called Vitality Bowl.  This place makes acai smoothies and mixes it with good, healthy natural things and it’s topped with fun things like fruit, granola, honey ect…  I love this place, except for two things, the location,which is 40 miles from me and it’s expensive!  A smoothie bowl runs from $8.00 up to $12.00!  Yes it’s filling and delicious, but having it a couple of times a week can hurt your pocket-book, so I decided to make my own and it probably cost me about $2.00 to make. Plus I know how many calories are in my bowl.  I don’t know how many is in their bowl and that can be kind of scary, no matter how healthy it is.

The base of the acai breakfast bowl is of course acai juice. I purchased a smoothie pack that I saw from Whole Foods, but I do know it available in the healthy, frozen section of most grocery stores. It came with 4 smoothie packs to a package. All it is, is pure acai juice, no sugar and comes in at only 73 calories a pack. I am sure you could use regular acai juice, but when I saw the smoothie packs, I had to buy and try it out. Here is a pic of the acai smoothie pack I bought.

I mixed frozen strawberries and unsweetened coconut milk to the acai puree and blended it until it was nice and smooth. You could also use other fruit like banana’s or blueberries, but you know how much I love my strawberries. Acai and berries go so well together. Here is a picture of the acai smoothie before I added my toppings.

I topped my smoothie bowl with strawberries, unsweetened coconut, almonds and a drizzle of honey. The honey really makes this bowl perfect. A little bit goes a long way in this recipe. I used all natural local honey from the Farmers Market.

Now of course you can top your smoothie bowl with whatever you like, banana’s, other berries, nuts of your liking, granola and I bet even maple syrup. Oh and we must not forget peanut butter would be perfect too!! Heck, I could probably put peanut butter on just about anything and be happy! 🙂

The smoothie bowl is naturally sweet, filling and you have the perfect taste of berries with the crunch from the almonds. Oh and it has 8 grams of fiber and 5 grams of protein. Now you can see why it is filling and the calories are only 223 calories which is great for a breakfast that will keep you full for hours!! This is truly a wonderful breakfast and perfect for the warm weather that will hopefully grace our presence soon!!

If you’re looking for a different kind of smoothie to add to your smoothie collection, this is a good one. I really enjoyed my Acai Breakfast Bowl and I can’t wait to make more creations!!! It’s so much fun adding all that goodness to it!!
