Cucumber & Dill Sandwich / Lipton Pure Leaf Iced Tea

Hi Everyone,

My favorite part of the work day, besides seeing my friends, is lunch time! I look so forward to 12pm to come around!  Normally for lunch we hang out in the front room where we have a couch to sit on or if it is nice out, we will go outside and sit in the sun.  Oh how I love that time of day!!  I rarely ever buy my lunch, I normally pack one and today I want to introduce to you my newest lunch sandwich, the Cucumber and Dill Sandwich!

My Cucumber and Dill Sandwich is light, creamy, low-calorie and healthy. I simply love!! What I like to have with my lunch is an apple and one of my favorite beverages Lipton Pure Leaf Iced Tea. Have you ever had Pure Leaf Iced Tea? It’s a wonderful drink, it’s refreshing, fresh brewed, and all natural, Pure Leaf Iced Tea is made from the finest ingredients and begins with the freshest tea leaves picked at their peak. My favorite flavor is unsweetened, but I have to say lemon flavor comes in second. When ever I go out to a restaurant I always order unsweetened iced tea, but when I am at home I always drink Lipton Pure Iced Tea. My Husband even likes it, his favorite flavor is the Sweet Tea.

To make the Cucumber and Dill sandwich I mix cucumber with greek yogurt, lemon, salt, pepper and dill. It’ so simple, yet very filling. I normally make this for a sandwich, but I have been known to also use it to dip my crackers in. I just love this little sandwich and you can bet I will be having it for lunch today!!

Cucumber & Dill Sandwich

A light, refreshing, healthy sandwich made with cucumbers, greek yogurt, lemon and fresh dill.
Serves: 1 sandwich
Ingredients
  • ¼ cup greek yogurt, plain
  • ½ tsp. lemon juice
  • 1 dash salt
  • 1 dash pepper
  • ½ tsp dill, fresh
  • ⅓ cup cucumber, sliced small
  • 2 slice whole wheat bread (I used gluten-free)
Instructions
  1. In a bowl, add greek yogurt, lemon juice, salt, pepper and dill; mix until combined. Stir in cucumbers.
  2. Add cucumber mixture to one slice of bread and top with other slice of bread.

Calories are calculated using 90 calorie bread.
