Hi Everyone,

This past week I went shopping at Walgreens and as I was walking down the cereal isle, and I noticed Post Great Grains Cereal. I took a peek at the nutritional value and I saw that it is a low-calorie, low-fat cereal that is made with whole grains, cranberries and almonds. Oh my gosh, I love cranberries and almonds. One of my favorite, favorite combos and as soon as I saw the box of cereal, I had to grab it. I knew right off the bat what I wanted to make.

Let me introduce to you my newest breakfast cookie creation the Almond Crunch Breakfast Cookie. This cookie has it all! It’s crunchy, with a soft middle with a hint of banana and has lots of cranberry flavor. It is so delicious! Posts Great Grains Cereal in Cranberry Almond Crunch flavor is the perfect cereal for these cookies. You get the total flavor of the cereal with little bits of extras, like banana and almond nut butter. Even my Husband really liked them. Since summer is coming I thought these cookies would be a perfect grab and go breakfast, without all the time in the kitchen or calories! Plus it’s a cookie so it is like having dessert! Who wouldn’t want a cookie for breakfast! I truly love the crunchiness of the cookies!

Have you Guys tried Post Great Grains Cereal? It’s crunchy, sweet, contains 30g of whole grain per serving, 5 grams of fiber, 4 grams of protein and 3 grams of fat. I don’t know how I never tried this cereal before? Not only does it make for great cookies, it’s also good topped on yogurt!! Yum!

The cookies are super easy to make too! In a bowl, I added a mashed banana, mixed in almond nut butter, maple syrup and almond extract. Then I added Post Great Grains Cranberry Almond Crunch Cereal and to bind it all together I added oat flour.  Then I scooped the cookies with an ice cream scoop, packed it tight and popped the cookie dough onto my baking sheet. Bake for 10 minutes and you have the perfect little breakfast cookie!! These cookies really exceeded my expectations.

A whole grain, good for you breakfast cookie that crunchy on the outside and soft in the middle that tastes like sweet cranberries and almonds with a hint of banana.
Serves: 18 Cookies
Ingredients
  • 1 banana, mashed
  • 2 tbsp. maple syrup
  • ⅓ cup + 1 tbsp. almond nut butter
  • ½ tsp. almond extract
  • 3 cups Great Grains Cranberry Almond Crunch Cereal
  • 1 cup oat flour (oats processed into flour)
Instructions
  1. Preheat oven to 350 degrees
  2. Line a baking sheet with parchment paper; set a side.
  3. In a bowl, add banana, maple syrup, almond butter and almond extract; mix until combined. Stir in Great Grains Cranberry Almond Crunch Cereal, mix until combined. Don't worry if the cereal breaks up. Stir in oat flour.
  4. With a large cookie scoop, scoop a heaping serving of cereal mixture (pack it tight into the cookie scoop) and place 1" inch apart onto prepared baking sheet.
  5. Bake in oven for 10 minutes or until the bottom of the cookie is lightly golden. Let cool on cookie sheet for a few minutes.
Notes
Note: To make oat flour, take one cup of rolled oats and place in a mini food processor and processor until a flour constancy.

Right now Walgreens has Post Cereal on sale at Walgreens for $1.99 from March 30 thru April 5 (while supplies last). I think I’ll pick up another box of Post Great Grains Cereal along with a box of Post Fruity Pebbles. Fruity Pebbles is my secret indulgent cereal, but it’s still low calorie! he he  Here is a picture of Post Great Grains Cereal Box.

So this weekend, why not whip up a batch of breakfast cereal cookies, freeze them and have them as a grab and go breakfast for work? That is what I did! You can’t beat these cookies for breakfast, plus it’s so easy to make, all you need is a spoon, mixing bowl and a few ingredients. I love how simple this recipes is!
