Non-Dairy Vanilla Coffee Creamer

Hi Everyone,

Back in February I posted a recipe for Vanilla Coffee Creamer, which I just love and you asked if I could make a non-dairy coffee creamer.  I thought, how can I do it?  After some playing around, I found the perfect Non-Dairy Vanilla Coffee Creamer.
Non-Dairy Vanilla Coffee Creamer
The Non-Dairy Vanilla Coffee Creamer came out just perfect! At first I wasn’t sure because I was used to my dairy coffee creamer which I have been making weekly. The Non-Dairy Creamer is creamy, frothy with the perfect amount of vanilla. I was pleasantly surprised on how much I love it! Now this will be my weekly coffee creamer because it’s super creamy, adds that bit of froth to my coffee and it’s only 21 calories for two tablespoons. What’s not to like?
Non-Dairy Vanilla Coffee Creamer
I made the creamer using all Trader Joe’s Ingredients, light coconut milk from a can, unsweetened coconut milk from the carton, sugar and vanilla. It’s so easy to make too. I tried the recipe with almond milk and if you’re a fan of almond milk I highly recommend using that, by switching out the coconut milk from the carton and subbing unsweetened almond milk. I am not the biggest almond milk fan, but I am trying hard to get used to it. As for sugar, I went with granulated sugar, since I didn’t want to add other flavors to the coffee, I wanted pure vanilla flavor. However, you can always use honey or maple syrup. There are so many options, it’s up to you to what you like.

Your probably wondering about the coconut taste. You get a slight hint of coconut, but I used three tablespoons of vanilla extract to mask the coconut flavor. I am a big fan of coconut, so it didn’t bother me and I really didn’t taste it, but if your coconut sensitive you may want to opt in for almond milk instead. I also recommend shaking the creamer before using. Due to the fact that there is coconut fat in the creamer, it can separate just a tad bit, but not much. No mater what kind of coffee creamer I use, I always shake it anyway!

Non-Dairy Vanilla Coffee Creamer

A creamy thick, non-dairy creamer with the perfect vanilla flavor made from coconut milk. Only 21 calories for two tablespoons.
Serves: 4 cups
Ingredients
  • 14 oz can light coconut milk (from can)
  • 2 cup unsweetened coconut milk (from carton)
  • ¼ cup sugar or stevia
  • 3 tbsp. vanilla extract
Instructions
  1. In a medium pot, set over medium heat, add light coconut milk, unsweetened coconut milk and sugar. Stir constantly until sugar is dissolved and bubbles start to appear on the sides(Don't boil). Whisk in vanilla extract and cook for two minutes more.
  2. Let creamer cool completely, than store in a glass container in the refrigerator for about a week. Shake before using.
  3. Note: You can always sub unsweetened almond milk for coconut milk from the carton.

      Hi Kim, I went with canned and carton coconut milk because the canned coconut is much thicker, but because of high calories (170 for canned per 1/3 cup and 50 calories a cup for carton) and to thin it out a bit, I also used coconut milk from the carton. You get more coffee creamer and less calories, plus you still get a nice thickness to it.

    4 cups of coffee creamer in a week? No way could i use it all. Can you come up with a recipe to use some of it? Maybe an icecream, pudding, or another of your innovative ideas?

      Hi Carol! I am coffee crazy, so yes I can go through 4 cups in a week, sad but true. You could also use the leftover creamer, as you said in ice cream, but you could use a little in your smoothies, or oatmeal, ohh, baked oatmeal, hmmmm, what else? I love that you suggested pudding or ice cream. I’ll have to play around with the idea. You could use it in any baking recipe that requires half & half and vanilla extract together. You got me thinking….

    This is great! I just made it, and it turned out creamy and just the right amount of sweetness. Do you think it would freeze well? I’m afraid I won’t use all of it before it goes bad.

        Sorry it took me so long to get back to you, but I did successfully freeze this. It separated when it thawed, but I just gave it a good shake and it was fine. Thanks for the great recipe!

    Just made your creamer with almond milk and canned cocoanut milk. I used half the vanilla for my preference and used 2 cups of the batch to make chia seed pudding.

    I’m curious about the coconut milk…. I like coconut, but am afraid of trying creamer recipes with it due to not wanting that taste in my coffee…. is there a coconut flavor to the creamer once it’s made?

      If you use coconut milk from the carton, you do not taste it in the creamer, at least I don’t. You could always use non-fat milk too. 🙂

          Hi Cara, Don’t use coconut from a can. It will turn out to fatty and greasy and you will have a coconut flavor. Plus the calories would be through the roof. I don’t recommend coconut from the can.

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers! 

I hope you check out everyone’s outdoor space. I love this time of year and I can always use more outdoor inspiration.

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!

Happy Wednesday! I am sharing with you my garden f Happy Wednesday! I am sharing with you my garden from last year. I’m gearing myself up to start working in the garden this weekend. It’s supposed to be mid 70’s. So if all goes planned you will be seeing quite a few gardening posts.

Last years extreme summer heat took a major toll on my garden. I lost quite a few plants. 😫 For some reason I lost my Butterfly Bush. I plan on adding another one in the same spot. A lot of my lower flowers like Hummingbird Mint and my Coneflowers didn’t survive. We will be looking at the sprinkler system to make sure the plants are getting enough water.

At least this garden is mainly annuals, so it should fill up with some color soon. I’m unsure what to do with my other gardens as my dogs have destroyed them. They keep on digging in the dirt. Maybe I should get them a sandbox to play in?
