Hello Everyone,
You know when you clean out your cupboards and you have half of this and half of that left and you don’t know what to do with it? I was cleaning out the dreaded snack cupboard and I found half-opened bags of pretzels, cereal, nuts and more. So I thought why not make a trail mix with what I have leftover?
My mix is made with Barbara’s Multi-grain gluten-free puffins, pretzels, Trader Joe’s Savory Thin Rice Crackers and Trader Joe’s Honey Roasted Peanuts. What a fun combo of treats. To give it may snack mix some flavor I made a wonderful little honey sesame sauce to pour over the top. This snack mix turned out fantastic! Actually the first time around, I burnt it, but the second time it turned out perfect. You really need to watch these bad boys while they are baking because they can burn. Here is the picture of the ingredient is used. I used my old camera to take picture of products, since it turns out better than my new camera, but I don’t know what the heck happened. The pictures all turned out cockeyed. I think my camera needs to be cleaned and adjusted. it didn’t look like this when I looked through the lens.
To make the sauce to coat the snack mix, I used soy sauce, honey, lemon, sesame oil and sesame seeds. I heated it in the microwave and poured over my mixture. Just bake in the oven for 15 minutes and it’s done. If you don’t have my snack mixture you can always use other snacks you make have in the house. Just make sure they are crunchy.
- 2 cups pretzel sticks (gluten free)
- 3 cups Savory Thin Rice Crackers (gluten-free)
- 3 cups Puffins Multi-grain Cereal (gluten free)
- ¾ cups honey roasted peanuts
- 1 tbsp. sesame oil
- 2 tbsp. honey
- 2 tbsp. lemon juice
- 2 tbsp. reduced-sodium soy sauce
- 1 tbsp. sesame seeds
- Preheat oven to 300 degrees
- Line a baking sheet with parchment paper; set a side.
- In a bowl; add pretzel sticks, rice crackers, puffins and peanuts; set aside.
- In a microwave safe bowl, add sesame oil, honey, lemon juice and soy sauce. Heat in microwave for 35 seconds. Stir in sesame seeds and pour over snack mixture. Mix everything together until everything is covered with the sauce.
- Pour onto prepared baking sheet and bake for 15 - 20 minutes, until lightly crisp. Stirring half way through.
- Take out of the oven and let cool completely.
- Store in a airtight container.
- Makes a little over 7 cups
This was really fun to make! I have been experimenting with snacks lately because I will be going away for work conference and I am terrified of the food that will be there. So I thought I would bring my own snacks, that way I won’t have the urge to reach for a pastry, bagel or anything else that will be bad for me.
Why don’t you clean out the pantry and make yourself a snack mix with the ingredients you have? You never know what new-found snack you may make! 🙂
Have a wonderful day!
Toodles,
Jennifer
