Hi Everyone,
Happy St. Patrick’s Day and Smoothie Monday! Since a lot of people will be celebrating today, I thought we should at least start our morning off with a healthy start. That way when we drink green beer, eat corned beef and cabbage and all of the fun St. Patrick’s Day food, we will at least know we had a great start with the perfect St. Patty’s Day green breakfast!!
So let me introduce to you my Mint Monster Smoothie! This smoothie is just amazing! It’s light, creamy, refreshing and naturally green in color. I just love it and will be drinking this a lot! If you’re a follower of PBandP, you will know I LOVE mint! So this smoothie is right up my ally!
The smoothie is made with a frozen banana, mint extract, milk and spinach for the beautiful green color. I just love how you can throw spinach in a smoothie and you don’t even taste it. It gives the smoothie the most beautiful green color. Speaking of green! My dog Sampson, was sitting near the back door moving his mouth like he was chewing a piece of gum. I asked what do you have? He just looked at me chewing away. So I reached in his mouth and pulled out two dollars. What the heck? How does he always get money? I left a 20 dollar bill on the counter once and Little Jenny called me and said Sampson ate a 20! Gosh darn that dog! I just wonder where the $2.00 came from? Well it’s mine now! I just feel sorry for who I give it too. Just goes to show money is not clean, so wash your hands when touching it! You never know when a Sampson may have chewed on it.
- 1 banana, frozen
- ¾ cup non-fat milk or milk of choice
- ⅛ -1/4 tsp. mint extract
- ¼ tsp. stevia
- 1 cup spinach
- Add all ingredients to a blender and process until smooth.
- Note: Start with an ⅛ teaspoon of mint extract and add a pinch more if needed.
I want to wish everyone a fun, safe St. Patrick’s Day! I know I’ll start my day off with this smoothie, then off to work I go. I think today should be a holiday! 🙂
