I have to tell you I have been on a cherry chocolate kick all month and I can’t get enough. So today I am sharing with you one of my all time favorite breakfasts; Cherry Chocolate Chip Baked Oatmeal, and oh my gosh is it good!! I actually made this recipe two days in a row. The first night I made it and my photos did not turn out at all. Ugh! So I took my baked oatmeal to work the next day to share with everyone. It got eaten up instantly. Everyone raved about it!! I told them that I have to re-make the recipe because I wasn’t happy with the pictures, so I will bring more in tomorrow to share. I actually got a YAH’S and CHEERS! I never had such high re-marks on a recipe. I mean I get this was good, love this recipe, but never cheers! I have to admit, this is one of the BEST baked oatmeal recipes I have ever made!!
The oatmeal is made with gluten-free oats, frozen cherries, vanilla extract, maple syrup, chocolate chips and what holds it all together is Silk Unsweetened Vanilla Almondmilk. Every time I make baked oatmeal I use unsweetened vanilla almondmilk. It has the most wonderful flavor, it’s gluten-free, vegan and 30 calories a cup!!! I love that! To make the baked oatmeal, in a bowl, I mixed together the gluten-free oats, a pinch of salt and baking powder, whisk together and placed it in a baking dish sprayed with cooking spray. Then I topped it with my frozen cherries.
In a microwave safe measuring cup, I melted my coconut oil,then added maple syrup, vanilla extract and Silk Unsweetened Vanilla Almondmilk. Whisk it all together and carefully poured it over the top of my oatmeal, then sprinkled it with dairy-free chocolate chips. No one had a clue I used dairy-free chocolate chips. lol
I baked it for 35 minutes until the top was firm. It turned out just perfect! The baked oatmeal is sweet, filling, healthy, low-calorie and simply delicious. If you love chocolate and cherries, you will LOVE this baked oatmeal. I was amazed how my co-workers loved it. I warmed up the oatmeal by drizzling a little Silk Almondmilk over the top and microwave it for a minute. It re-heated perfectly. This is a wonderful dish to share with friends, family or to have for yourself for a few days. Plus I love that I know I am feeding my friends a good for you, energetic, filling breakfast that will help them focus throughout the day and the best part is, it makes them smile!
- 2 cups rolled oats (I used Gluten Free)
- ½ tsp. baking soda
- ¼ tsp. sea salt
- 1½ cups Silk Unsweetened Vanilla Almondmilk
- 2 tsp. vanilla extract
- ¼ cup maple syrup
- 2 tbsp. coconut oil, melted
- 1 cup cherries, frozen or fresh, cut in half
- 2 tbsp. mini chocolate chips
- Preheat oven to 350 degrees
- Spray an 8 x 8 baking dish with cooking spray; set aside.
- In a bowl add oats, baking soda and salt; Mix together. Pour into prepared baking dish. Top with cherries.
- In a separate bowl; add almond milk, vanilla extract, maple syrup and coconut oil; whisk together until combined. Slowly pour over oat and cherry mixture;
- Sprinkle with chocolate chips.
- Bake for 30 - 35 minutes until lightly brown on top and oatmeal is set.
Note: I topped my Baked Oatmeal with shredded coconut and slivered almonds, not included in the calorie calculation.
I am just so happy that the second batch of pictures turned out so much better and my co-workers were happy to have a yummy breakfast two days in a row.
