Chicken and Sweet Potato Cherry Salad / Giveaway #GoTart

Hi Everyone,

Today I am so excited because today I teamed up with Healthy Aperture and the Cherry Marketing Institute for an awesome giveaway and to celebrate one of my favorite little fruits, cherries!  Yah!!!  This is the perfect time to celebrate cherries because it is National Cherry Month!! So let’s get rolling to today’s recipe, which is Chicken and Sweet Potato Cherry Salad!  Yummmmmmy!!!

Chicken and Sweet Potato Cherry Salad #GoTart
My salad is made with roasted sweet potatoes, juicy chicken that was marinated in Tart Cherry Juice dressing, slivered almonds, goat cheese and my favorite part of the salad, dried tart cherries. Oh how I love those little tart cherries. I happened to pop a few in my mouth while putting my dinner together, he he This salad is the perfect balanced meal. It contains protein, carbs, fiber and healthy fats!! It’s great for dinner or even for lunch. I made sure I made extra so I could have it for lunch the next day. This salad is perfect warm or cold!
Chicken and Sweet Potato Cherry Salad #GoTart
I made a delicious slightly tart, savory and a little sweet dressing for my salad. It’s made with tart cherry juice, red wine vinegar, stevia, garlic, mustard and olive oil. I made sure that I made enough dressing to marinate my chicken in it too. Let me tell you the dressing is fantastic, especially on the chicken. My chicken turned out so moist, juicy and tender. I normally love to grill my chicken, but being chilly out, I decided to bake it and baking it was the way to go!! I love when you cut a piece of chicken and the juice just flows out of it. That’s when you know you cooked it right! Oh yah!
Tart Cherry Balsamic Dressing #GoTart
Did you know that dried Tart Cherries are rich in vitamin A and did you know that Montmorency tart cherries contain anthocyanins, a flavonoid that contributes to the ruby-red color and distinguishing taste. I love the taste! They make for a great snack and because they contain phytonutrient compounds inside, which may help prevent disease and keep your body working properly. Chicken and Sweet Potato Cherry Salad #GoTart

Chicken and Sweet Potato Cherry Salad

A sweet, savory salad made with juicy baked chicken, roasted sweet potatoes and tart dried cherries drizzled with a cherry balsamic vinaigrette.
Serves: 4 servings
Ingredients
  • ⅔ cup tart cherry juice
  • 1 tsp. dijon mustard
  • ½ tsp. garlic
  • 2 tbsp. red wine vinegar
  • ¼ tsp. stevia
  • 1 tsp fresh thyme or ½ tsp. dried thyme
  • 1 tbsp. olive oil
  • 1 lbs. chicken, skinless, boneless
  • ¼ tsp salt
  • ¼ tsp. pepper
  • 8 oz sweet potatoes (two medium potatoes), peeled, diced into bite size pieces
  • 1 tsp. olive oil
  • salt & pepper to taste
  • 8 cups mixed greens
  • ⅓ cup dried tart cherries
  • ¼ cup slivered almonds, roasted
  • ¼ cup goat cheese
Instructions
  1. Make Cherry Balsamic Vinaigrette:
  2. In a measuring cup, add tart cherry juice, mustard, garlic, red wine vinegar, stevia and fresh thyme; whisk together until combined. While whisking add olive oil. Makes 1 cup.
  3. Spray a 9 x 13 baking dish with cooking spray, add chicken and sprinkle with salt and pepper. Pour ¼ cup of dressing over the chicken and let it marinate in the refrigerator for 1 hour. Reserve the remaining dressing for topping on the salad.
  4. Preheat oven to 375 degrees.
  5. Line a baking sheet with aluminium foil sprayed with cooking spray or you can use parchment paper; set aside.
  6. In a bowl add sweet potatoes; drizzle olive oil over potatoes and sprinkle with salt & pepper; mix together. Spread potatoes on prepared baking sheet. Place in oven for 15 minutes; flip and cook potatoes another 10 - 15 minutes until fork tender.
  7. When you add the potatoes in the oven, add the chicken and bake the chicken for 30 to 35 minutes until no longer pink. Let chicken cool for a couple of minutes, then slices into bite size pieces.
  8. Evenly divide between 4 plates; add mixed greens, sweet potatoes, chicken, slivered almonds, dried cherries and goat cheese. Serve with remaining cherry balsamic vinaigrette.

    Cherry pie has always been my favorite and brings back good memories. My Grandma Helen would make it for me whenever we went back home to Wisconsin to visit family. It was the best pie ever! Plus, cherries are red…my favorite color!

    This salad is just perfect to me, so many of my fave ingredients in one dish :).
    I really love eating cherries as part of my post workout snack, I hear they’re good at repairing and helping your body recover after exercise. AND they are freaking delicious.

Today I am sharing with you a spring vignette that I created. I just love tulips this time of year. Though, they seem to be out all year at Trader Joe’s, which is kind of strange. I can’t wait until they get peonies and lilacs. My two favorites.

Even though it may not feel like Spring,  there is no reason why we can’t start prepping for it. It’s going to be time soon to plant flowers, add a floral wreath to the front door and of course a welcome mat to invite everyone to your home.

I wanted to share with you my new welcome mat that I got from @cocomatsnmore. They just had their Spring release and oh my gosh so many cute ones. I love there welcome mats. They are thick, bright colors and fast shipping. I absolutely love the flowers and the saying “Live Life in Full Bloom”. It’s so very true.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.
